(Critical) Used a heat strip and found dishwashing machine not hot water sanitizing dishes. To correct call for repair and use the 3 compartment sink to wash, rinse, and sanitize dishes. ,

(Critical) Observed a sewer smell in the front counter floor and kitchen floor drain area. Found a sign in the employee womens restroom fauce stating " do not use". Pic states they are having plumbing issues with drains, and observed a sewer company on site evaluating plumbing issue. To correct repair plumbing system to work as designed ,

Found the lids of dumpster left open. To correct close dumpster lids, and remind staff to close dumpster after each use.

Found the floor, under equipment, edges and corners in the bar, kitchen and storage areas soiled with accumulation of debris. To correct thoroughly clean floor and clean on a more frequent schedule.

Asked employee what is the procedure for preparing the apples in bowl in the back front counter area. Employee states apples are prewashed and are removed from case and placed in bowl for sale. Corrected by educating employee that apples need to be washed prior to display for sale, and had employee wash apples.

Found ground coffee on top of coffee maker and surrounding area. Found the ice bin in the beverage area not in use, but soiled with accumulation. To correct clean noted areas and keep clean.

Observed the presence of ants in the beverage storage room floor. To correct keep areas clean, in good repair, and continue pest control treatments.

(Critical) Used a quat test kit and found the sanitizing solution flowing from the quat dispenser in the mop sink at least 500 ppm, above manufacturer's recommended range of 150 to 400 ppm. To correct call for repair and have quat dispenser adjusted to dispense at manufacturer's recommended range. You may temporarily manually mix quat sanitizer and use quat test kit to verify proper concentration. , , found the pop nozzles of the pop machine in the kitchen beverage area soiled with light acccumulation. To correct follow manufacturer's directions and clean pop nozzles.

(Critical) Found time/temperature control for safety (tcs) food, sliced roast beef 45°F, chicken breast 45°F in the front, bottom, right drawer of the the 4 drawer prep top cooler. Pic corrected by discarding beef and chicken and was instructed not to store tcs food in this portion of cooler as this door was not completely sealing and tcs food in other areas of this cooler was at 41°F. To correct repair cooler to hold all tcs food at 41°F. ,

Found the pop nozzles of the pop machine in the kitchen beverage area soiled with light acccumulation. To correct follow manufacturer's directions and clean pop nozzles. , found the ceiling above the dishwashing machine with holes and peeling surfaces. To correct repair and finish ceiling to be smooth and cleanable.

Found the 4 drawer prep top cooler with drawer not completely sealing and tcs food above 41°F. To correct repair cooler to hold tcs food at 41°F in all parts of this cooler. Found the hot water rinsing gauge on the dishwashing machine indicating a hot water rinsing temperature reaching 210°F. To correct verify gauge is accurate, adjust as needed, as hot water rinse shall be no more than 194°F.
