At the main make line observed the floor wall juncture under and behind the cooking equipment with an accumulation of food debris and grime. Correct by cleaning now and on a more frequent basis to prevent the accumulation of debris.
In the reach in portion of the prep top cooler located next to the handsink observed water accumulating in the bottom of the unit. The water appears to be condensation from the cooling unit. Correct by investigating the source of the water and repairing to prevent the accumulation of water
(Critical) Observed the following phf items made on 11/13 not cooled within the required time because of using improper method: 1. 3 gal soup at 65 degrees f. 2. Deep, 1/2 hotel pan of mac and cheese at 90 degrees f food were in large containers. Cool foods as outlined above and as discussed during the inspection. Pic discarded the items during the inspection. Item corrected.
