(Critical) Observed 1) the drain line from the charcoal filter to not terminate with an air gap above the receiving drain. Provide a vertical air gap that is at least 2 x the discharge pipe diameter. 2) the two drain lines from the brewing equipment do not terminate with an air gap above the trough drain in the floor. Provide a device to hold the end of the hoses in place that also maintain the required air gap (vertical height that is at least 2x the discharge pipe diameter)

Observed only hose bib atmospheric back-flow preventers installed on the hose connections at the mop sink and the hot water line located behind the fermentation tanks. These water lines have non-food grade hoses with terminal end shut-off valves. These back-flow preventers are not compatible with down-stream shut-offs. To correct this issue provide either a spill proof pressure vacuum breaker (a. S. S. E. 1056 device installed at the required height) or an rpz back-flow preventer (a. S. S. E. 1013 device--no elevation requirement) upstream from the hose connections. The brewer indicated a desire to add a new hot water connection for the cold room. You could install one back-flow preventer to serve both connections if the back-flow preventer is installed upstream from the point where the water line will split to serve both hot water connections. Additionally, the brewer indicated only needing cold water to serve the hose at the mop sink. Install a back flow preventer and a separate hose connection at this mop sink location

Observed a wet wiping towel stored on the top cover of the bar area ice holding bin. Please only store wet wiping cloths in a container of sanitizer

Observed three bags of single service drinking cups stored on the floor in the back of the brewery. Corrected by elevating these cups off of the floor
