(Critical) Observed pan of rte meatballs in steam table on main prep line with internal food temperature of 105-115f. Pic stated that meatballs were reheated to 90f in microwave oven less than an hour ago and placed in steam table to finish reheating. This current reheating procedure must be ceased immediately. All phf must be rapidly reheated to 165f within 2 hours before placing food in steam table. Please remember that steam tables are designed to keep food hot, not for cooking or reheating. Pic corrected by properly reheating all meatballs in microwave oven to 165f and returning to steam table at time of inspection. Violation corrected
When i first arrived for inspection, observed employee making subs on main prep line without a hat or hair restraint on. All food employees shall utilize hats or hair nets when prepping or handling food to help minimize chances of potential food contamination (from employee hair).
Observed employee backpack stored on top of sealed packages of black olives on dry storage shelf in back kitchen area. All employee belongings must be stored in an area of kitchen which cannot possibly contaminate food or single service items. To correct, please relocate backpack to approved area as soon as possible
Observed floor drain receptacle under 3 compt sink soiled with putrid mold and debris. To correct, please clean now and on a more frequent schedule
