All pop nozzles and pop machine components must be washed, rinsed and sanitized every 24 hours and must be clean to sight and touch. (Critical) Observed all rte meatballs in front prep area steam table with internal food temperatures of 105-115f. Pic stated that meatballs were reheated in microwave oven less than an hour ago, but internal temperatures were not taken. All phf must be reheated to 165f or more within 2 hours. To correct, please verify food temperatures with food thermometer before placing meatballs in steam table. Pic corrected by reheating all meatballs in microwave oven to 170f at time of inspection and returning pan to steam table. Violation corrected.
(Critical) Observed all potentially hazardous foods (rte deli meats, cooked chicken, sliced tomatoes) in ric in front prep area with no datemark labels. Pic stated that some of the food was prepped this morning and some yesterday. All potentially hazardous rte foods must be properly datemarked with a 7 day consume by datemark label (day 1 is prep date). Pic corrected by properly datemarking all above mentioned foods at time of inspection. Violation corrected
Observed missing lid on outside trash dumpster in back of building (birds observed inside of dumpster at time of inspection). All dumpsters must be equipped with tight fitting doors and lids to prevent entry of unwanted pests, insects and birds. To correct, please contact trash hauler and have lid replaced as soon possible

(Critical) Giant subs (three foot subs) found in holding cabinet at front counter at improper temperature. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above, corrected at time of inspection by discarding giant subs with sliced meat, sliced cheese, sliced tomatoes and shredded lettuce found at 58°F - 62°F. When one section which is 1 1/2°Foot is assembled this section will be placed immediately into a refrigeration unit instead of holding in cabinet at room temperature. In addition the bread should be pre-chilled for party subs, this will make it easier to maintain the potentially hazardous food items on the sub at proper temperature. Will discuss further with subway corporate to determine proper sop for party sub assembly.
Clean black insert pans stacked wet on clean drainboard. Please provide adequate shelving to allow clean dishes to drain/air dry prior to stacking. There is additional space in rear office/storage room for some non-essential items to allow an additional shelf for storing clean dishes until dried.

Drain does not receive water draining from the third compartment (sanitizer compartment) of the 3-compartment sink rear kitchen without flowing over. Employees have been emptying sink with a large bowl. This third sink will need to be connected to the other two sinks so that it can drain properly or the drain for the thrid sink can be repaired so it accepts water without flowing over onto the floor. A follow-up inspection will be required once repairs have been made
