(Critical) I observed an unsafe cooling method used on a soup in the walk in cooler. Staff put an ice stick in soup but did not stir the product while cooling. I found the outside edge of the soup at 78*f after 2 hours of cooling. For the next month, i want you to use the cooling chart i left you to document all foods that are cooked and then cooled. Save the charts for me to observe when i return in a month.
(Critical) Quaternary ammonium was not at proper concentration in the 3c sink at the bar. It appears that the pump is not dispensing the sanitizer properly. Always use test strips to make sure proper concentration of sanitizer is dispensed. Call for repair of unit.
The ledges of the ice machines at the door/opening juncture needs cleaning. Clean now and place on a more frequent cleaning schedule.
Gaskets on the refrigerated drawer are torn. Torn gaskets are not cleanable and may allow warm air to get into the drawers and elevate food temperature. Steamer overflowing and leaking into bucket. Repair leak.
Many of the cutting boards are in need of replacement. Go through all cutting boards and replace those that are worn.

Cloth towels found as counter liners for utensils/plates/condiments at bar and kitchen. Cloth towels are not approved for this purpose. Use rubber mesth matting or other smooth and clenable surfaces.
There is a new walk in cooler outside. The condensate line for this new unit does not have insulation wrapped around it. Provide insulation for the condensate line to minimize potential for condensate to drip onto foods stored below the line.
Manufacturer's cranberry juice bottles are being reused for bar mixes after juice is consumed. This is prohibited. Discontinue this practice and provide approved food grade containers of similar size that are reusable.
The hinges on the door of the walk in cooler need repair/adjustment or replacement so that the door closes completely after entry and exit. Door stays ajar unless shut closed and this may cause elevation of ambient air temperature of the unit and ultimately may cause the food product temperature to increase over time. As discussed an additional self closer for the top of door can be installed if you choose to, the gasket on the gasket on the upright freezer in the bakery is torn. Once torn it is no longer cleanable. Replace split gasket. The concrete floor in the back corridor of the basement is uneven causing water to pond in this area. There used to be a drain which was filled in and now water ponds in this depression. Repair to eliminate ponding of water after mopping.
The following non food contact surfaces need cleaning: the interior of the upright freezer in the basement and the ice cream freezer. Interior of the upright freezer in the bakery. Clean now and place on a more frequent cleaning schedule.
The interior door of the prep unit is in poor repair with insulation exposed, the interior lining of the ice cream freezer door is in poor repair exposing insulation for the door liner. The interior lining for the chest freezer in the basement is in poor repair and covered with duct tape which is not approved where the ice wands are stored. Repair or replace door linings
The pop nozzle on the spray gun in the basement needs cleaning. Clean now and place on a more frequent cleaning schedule.
The following non food contact surfaces need cleaning: the shelves under the salad cooler, the interior of the cooler and freezer in the bakery area, the hood filters in the bakery, the outside of the crates storing utensils in the bakery and the shelves for the utensil storage in the bakery. Clean now and place on a more frequent cleaning schedule.
The hood filters are in poor repair and must be replaced. When replacing filters make sure they are properly sized to fit without spaces. Spacers are available to fill in any gaps that may result after new hood filters are installed. The interior doors of the prep units have the interior liners of the doors damaged with insulation exposed. Replace interior door liners. Gaskets on the prep unit doors are torn, gaskets on the bakery reach in cooler door are torn. Once torn they are no longer cleanable and must be replaced. Replace split gaskets.
The following non food contact surfaces need cleaning: the shelves in the walk in cooler, the table that the steamer sits on and associated piping in rear, the fryer cabinet, the interior of the 2 door freezer in the bakery and the door handle , the interior of the reach in cooler in the bakery and the ice cream freezer interior in the basement. Clean now and place on a more frequent cleaning schedule.
The light bulb in the liquor storage room is inot plastic coated or shielded. Provide plastic coated bulbs to minimize potential for glass fragments to get onto foods if bulb should shatter.

Standing water from plumbing overflow in depression in concrete floor in back corridor of the basement. Clean up standing water and clear out drain under standing water if applicable to avoid ponding water in the future.
