Found the exterior of the cooking hood soiled with dusty build up and the edges of the hood soiled with grease. To correct clean hood as soon as possible, and clean on a schedule to preclude accumulation.
Found a large tub catching drips from the evaporator coil of the basement walk in cooler. Found the bottom of the 1 door reach in freezer in the kitchen damaged with towels lining bottom. To correct repair components and parts of the walk in cooler and freezer.
Found the tiled wall on the side of the hood and the tiled counter in the back of the kitchen with chipped and missing tile. To correct repair tiled surfaces to be durable, smooth, and cleanable.
Found the baking pans and trays soiled and not cleaned at least daily. To correct clean pans and trays at least daily.

Found the lid and interior surfaces of prep top cooler soiled with accumulation and build up. Found the door gaskets and interiors of all coolers and freezers soiled. Found the floor of the basement walk in cooler soiled with water and debris. To correct set up a regular cleaning schedule, and clean all noted areas and keep clean.
Found the dough mixer in the prep area soiled with dough residual. To correct clean dough mixer at least daily.
Found the floor (under equipment, edges and corners) in the entire facility soiled with accumulation and build up. To correct thoroughly clean floor and keep clean. Found the walls in various areas of the kitchen soiled with splash and build up. To correct clean walls.

Found rte, tcs food, a container of facility made ranch dressing without 7 day datemark in the 1 door reach in cooler. Pic corrected by providing 7 day datemark ( day opened/prepared + 6 days) for feta cheese and ranch dressing, and has been instructed to monitor that employees are properly datemarking appropriate items.

The following areas are in need of cleaning now and on a regular basis in the future: the mop sink basin, the drain in the basement near the water heater, the floor in the basement
Provide trash cans at both of your hand washing stations for the disposal of paper towel.
Observed multiple refrigerators in the facility without air thermometers. Provide thermometers in these units
The following surfaces are in need of cleaning at this time: the wire rack shelving above the three compartment sink, the spill trays for the pizza oven conveyors, the interior of the two door pizza prep cooler (including the door gaskets), and the drain pan for the dish washing machine (under the removable food trap screen)
Observed a piece of wood that is being used as a shelf below the pizza oven. Please remove and replace with a smooth, easily cleanable and non-absorptive material such as metal or plastic)
Although some improvements have been made there is still a lot of unnecessary items/equipment in the basement. Remove these items from the facility

Observed a damaged floor tile in the middle of the walk in cooler. Replace the tile to provide a smooth and cleanable surface
