As stated in past, all employee uniforms and belongings must be stored in an area of kitchen which cannot possibly contaminate food or s/s/ items. To correct, please relocate aprons to approved storage area as soon as possible

Observed several utensils (scoops, tongs, spoons) stored all jumbled together in utensil drawers in back kitchen area. All utensils must be stored in a protected manner. To correct, please organize utensil drawers so the handles of all utensils point in the same direction and food contact portion of utensil is protected from potential sources of contamination (like employee hands)

Observed cutting board on prep line in front kitchen area with some deep cutting grooves and scoring. To correct, please resurface or replace cutting board so all surfaces are smooth and cleanable

(Critical) Observed facility not sanitizing pans and utensils correctly as i observed 0ppm of quat in 3 compt sink. All pans and utensils must be sanitized as per manufacturers directions on sanitizer label (in this case 200ppm). Also, wash and sanitize compartments were switched at time of inspection (staff currently sanitizing dishware in compartment hooked up to grease trap). To correct, need to train all staff on proper warewashing procedures (including proper sink set up and test strip usage). Corrected by demonstrating proper 3 compt sink setup and educating staff on correct sanitizer concentrations and proper test strip usage at time of inspection. 3 compt sink now setup properly with a sanitizer concentration of 200ppm of quat. Critical corrected

Observed handsink in womens restroom not completely sealed to wall (paint cracked). To correct, please seal handsink to wall as soon as possible to prevent dirt/debris and water from collecting behind sink.

To correct, will need to reorganize cooler so all raw eggs can be stored on bottom shelf. Pic corrected by reorganizing upright cooler and placing all raw eggs on bottom shelf at time of inspection.
