(Critical) Found hot time/temperature control for safety (tcs) food, lasagna 124°F in the center hot hold well of the steam table. Note: this half pan of lasagna did not cover hot hold well as half of well was open. Pic corrected by reheating lasagna to 165°For 15 seconds, and was instructed to monitor and ensure hot tcs food is maintained at 135°F and above.

Found the floor under equipment, edges and corners, soiled with accumulation. To correct thoroughly clean floor and keep clean.

Observed mouse droppings on the floor behind and besides equipment in kitchen. To correct keep facility clean and dry, in good repair, and continue mouse control measures.

Found the interior of the cooler used to transport and cold hold cartons of milk soiled. To correct clean interior of cooler.

(Critical) Found time/temperature control for safety (tcs) food, a container of tuna salad 44- 47°F in the domestic cooler. Determined that tuna salad was received at 48°F according to log sheet and made within 4 hours. Temporarily corrected by quick chilling tuna salad to 41°F in the freezer. To correct, pic has been instructed not to receive cold tcs food above 41°F.

Found 3 metal stemmed, dial faced thermometers out of calibration. Corrected by placing thermometers in an ice water bath and adjusting thermometers to 32°F.

Found the door gaskets, sheves, and bottom surfaces of cooler/freezer soiled with accumulation. To correct thoroughly clean cooler/freezer.
