Until repaired and capable of holding ph foods at 41 degrees f or below you may use time control as a temporary measure. Potentially hazardous foods in the unit should be kept at minimal quantities. Monitor time foods are placed in the unit. They are to be consumed or discarded within 4 hours of removal from temperature control this includes: cut tomatoes, cut lettuce, shredded lettuce, sour cream, cheeses, etc.
The hood filters need cleaning. Clean now and place on a more frequent cleaning schedule
The gaskets on the pizza prep cooler and the dough cooler are torn. Once torn they are no longer cleanable. Replace split gaskets.
(Critical) Soap is missing for the rear handsink in the dishroom. Provide soap for proper handwashing
