Observed the following non food contact surfaces to be soiled: exterior of the hobart mixer, observed the seals for the doors of the prep to cooler, and the exterior portion of the mechanical can opener. To correct, please properly clean these locations now and place on a more frequent cleaning schedule.
Observed the 3 door reach in prep top cooler and the walk in cooler to be lacking an ambient air thermometer. To correct, please provide ambient air thermometers for these units.

The cutting board at the prep station has deep grooves making it difficult to properly clean. Cutting boards shall be smooth and easily cleanable. To correct, have cutting board resurfaced or replaced
(Critical) The grey plastic pressure plate for the electric slicer is cracked and difficult to clean. Food residue was observed in the areas with cracks. Remove and replace this pressure plate with an new one so it is smooth and easily cleanable

Corrected by breaking down this equipment and then cleaning and sanitizing the surfaces. 2) the interior surfaces of the ice making machine are in need of cleaning to eliminate the slime build-up. Hire a refrigeration contractor who is familiar with this brand of ice machine to thoroughly clean and sanitize this unit
The water supply line for the ice making machine was leaking water. Corrected by tightening the fitting
Three door prep cooler: the door gaskets and the door frames are in need of cleaning to remove condensation and some mold growth. Bleach is not recommended for the door gaskets as this may make the gaskets brittle and crack
The dumpster area (shared with other businesses) is unclean. Ensure this area stays picked-up to eliminate the food that will attract pests
The following surfaces are in need of cleaning: the floor in the walk in cooler, the floor and floor sink located just outside the walk in cooler, the floor sink receiving wastewater from the dish washing sink, the hand washing sink faucet, the spill tray area of the soda station and inside the base cabinet under the soda station
(Critical) I observed raw shell eggs stored on top of a pan of mayo, creating a cross contamination potential. To control this, always store raw animal foods on bottom shelf. Corrected by doing such.
(Critical) A container of cole slaw was found past the use by date of 1/14. Staff need to pay attention to use by dates and discard expired foods. Corrected by discarding.
(Critical) Found a pan of sliced tomatoes sitting out on prep table and at 46*f. Cut tomatoes must be held at 41*f or less. Staff need to keep tomatoes immersed in the ice bath at all times. Corrected by doing such.
Replace the missing knob for the hot water valve at the handsink. You also need to install a long faucet stem so it reaches into all 3 compartments of the dishwash sink. I want this done within 3 week and send me a picture of it.
Clean the floor drain crock under the ice machine on a regular basis.

You need to provide a spot for staff to hang their coats up. They cannot be draped over the pop.

Provide a place for staff to hang up coats. I found a coat draped over bottled soda.
(Critical) I found cut tomatoes stored on ice at 44*-50*f. Must be holding at 41*f or less at all times. Container of tomatoes was set on top of ice, and the containers must be submerged in ice on all 4 sides. I need you to budget to purchase a countertop cold rail to hold your cut tomatoes and cut lettuce in. Corrected by discarding tomatoes and setting up proper ice bath.
The front door was propped open. Keep shut unless you have a screen door. The back screen door had ripped out screens and was not tight fitting. You need to keep the back door closed until the screen door is fixed.
I did not detect any sanitizer in wiping cloth bucket. Must keep at 50-100ppm. Change out about every 2 hours or when it drops below 50ppm. Corrected.

Found the dial faced thermometer outside of the walk in cooler not working, and the internal hanging thermometer in the walk in cooler soiled and appear damaged. To correct repair/replace thermometer, and provide at least 1 properly working thermometer.
Found several employee coats on top of canned food on the storage shelf. To correct set up an employee storage area that is segregated from food storage area.
