(Critical) At the in use mechanical dishwashing machine observed the residual chlorine concentration of the final rinse at 0 ppm. The sanitizer reservoir is full and the tubing is properly routed. No sanitizer could be pumped after several minutes of priming the machine. During inspection the pic called a service contractor. Contractor arrived and repaired the machine. Final rinse sanitizer concentration is between 50 and 100 ppm. Item corrected.

(Critical) On the main cook line at the prep top cooler across from the wok table observed the following cold holding food/temperature combinations: two pans raw chicken at 50 degrees f. Two pans raw beef at 50 degrees f. One pan raw shrimp at 50 degrees f. These items had been in the cooler since facility opening. The air temp thermometer inside the unit registered 50 degrees f. Non phf foods were found to be at 50 degrees f. The pic called for service on the unit. The service person arrived during the inspection. The unit was repaired during the inspection. Phf items found during inspection were discarded and replaced with fresh proper temperature product from the wic. Item corrected.

This grease appears to be originating from the cooking area located on the first floor above the water heater room. Pic corrected during the inspection by calling the dishwasher repair company (ecolab). A technician was in the area and came to the establishment to make repairs. Item corrected

Observed the outside entry screen door to the kitchen with torn screening and no self closer. Correct by repairing or replacing this door to prevent insect entry into the facility

Staff could not locate a food thermometer. As discussed, there must be several thermometers on hand, to monitor food temperatures. These must be accurate and in good working condition

The top of the microwave oven has dried on food debris. Cooking equipment must be frequently washed, rinsed and sanitized. Food debris must not be allowed to accumulate.

As discussed at the time of inspection, the areas below the wok's need to be cleaned. There is a lot of grease and food debris located there. Non-food contact areas must be frequently clean to promote good sanitation. Increase the cleaning frequency of this area.
