(Critical) I ran a measuring cup through the hot water sanitize dishmachine and it did not get to the minimum 160*f. Call for repair of the unit. Until the dishwasher is repaired you will need to manually sanitize in the large sink. Ok to wash things in the auto dishmachine, but manually sanitize. I will be back in 2 weeks to verify machine is properly heat sanitizing.

(Critical) Ants noted by the floor drain under the dishmachine. Correct by calling for extermination. Place on routine extermination frequency if necessary. Once exterminated reseal around all drains as that is where ants are and have been observed in the past.

There is excess condensation on the outside of the double door freezer in the rear storage area. The condensation is leaking onto the floor and leaving a puddle trail. It is possible that this is due to a bad door gasket or misaligned gasket or door hinges. Repair /replace to eliminate excess condensation build up

(Critical) Whipped butter found out at room temperature from previous day for service to the customer. Whipped butter is potentially hazardous and must be maintained at 41 degrees f. Corrected by discarding butter at time of inspection. In the future keep whipped butter cold at 41 degrees f or below or change to non whipped butter that is not potentially hazardous and can sit out at room temperature.

(Critical) The dishmachine would not turn heat temp black indicating reaching 160 degrees f after 10+ cycles. In addition the pressure gauge was reading 0 and either the pressure gauge is inaccurate or the pressure reducing valve may not be functioning. Repair unit to provide at least 160 degrees f water to sanitize utensil surface. Hot water was reading 185 degrees f on the guage on the unit at time of inspection.

Pressure gauge on the dishmachine was reading zero and is either not functioning or indicative of a pressure reducing valve problem as hot water was not reaching 160 degrees f on the utensil surface. Repair/replace in conjunction with repair on dishmachine
