Pic corrected by providing 7 day (day opened/prepared + 6 days) for ham and horchata. This is a repeated priority foundation violation and a risk control plan has been issued. ,

(Critical) Found time/temperature control for safety (tcs) food, a container of pork 49°F and a container of potatoes 50°F in a melted, shallow ice bath. Pic corrected by discarding pork and potatoes and has been reminded to hold tcs food at 41°F and if using an ice bath, ice must completely surround food container and replenish ice as it melts. This is a repeated cold hold violation using ice baths and a risk control plan has been issued. ,

(Critical) Found the pop nozzles of the self service pop machine soiled with heavy accumulation. To correct follow manufacturer's directions and clean pop nozzles and keep clean. ,

Found the hood filters and sides and edges of hood soiled with greasy build up. To correct clean hood and hood filters and clean on a more frequent schedule.

Found the floor, under equipment, edges and corners in the cooking area and prep areas soiled with accumulation and build up. To correct thoroughly clean floors and keep clean.

Found water dripping from interior of 3 door prep top cooler and rags on floor in front of cooler catching drips. To correct repair cooler so water is properly drained.

Found the interior bottom of bulk bins soiled with debris ( food items left in original bags). To correct clean bottoms of bulk bins.

Found no thermometer in the 3 door prep top cooler and 1 door prep top cooler in the cooking/prep area. To correct provide internal hanging thermometers in all coolers.

Found the floor under equipment, edges and corners in the kitchen soiled with grease and accumulation. To correct thoroughly clean floors and keep clean.

(Critical) Found the drain line of the ice machine draining directly into an end plug of a drain line without air gap. To correct provide an air gap of at least 1 inch from the end of the ice machine drain line and the rim of the drain line.

Observed gaps along the wall and floor around the front counter area. To correct fill gaps to be durable, smooth and cleanable.

Found an unsealed wood stand used under the ice machine. To correct either replace wood stand with a stainless steel equipment stand or seal wood stand to be nonabsorbent.
