I want managers to be using their metal stem thermometers to verify that foods are temping out at 41*f or less. Do not use this cooler to store any potentially hazardous foods until the unit is repaired and holding 41*f or less. Begin using cooler monitoring charts i left with you. I will be back in 2 weeks to verify this unit is holding 41*f or less. ,

No sanitizer detected in wiping cloth solution. Gallon of bleach being used was weak. Used new gallon and sanitizer came out fine. Again, managers need to be using test strips to verify for proper bleach levels. Corrected
(Critical) Beverage cups were found stored next to drain cleaner and under the soap dispenser at the front handsink. You need to keep toxic items stored safely away from foods or food contact items and store cups in a safe location where they won't get contaminated. Corrected by doing the above.
(Critical) I observed staff cutting strawberries without gloves on. You are not to have bare hand contact with ready to eat foods. Managers need to assure staff are wearing gloves. Corrected by putting on gloves.
There was no sanitizer bucket at the front coffee prep area and the wiping cloth was out on the counter. Keep cloth towels in the sanitizer to disinfect the towel.
Please clean the cooler gaskets more often. The front reach in cooler gaskets are dirty.
You need to repair the leak that is coming into the walk in cooler from the compressor drip tray.
I want you to get stuff that you are storing on the floor up on racks and at least 6" off the floor, so the floors and be swept and mopped easily.

I observed a staff coat hung on a food storage rack in the back kitchen. Staff need to be storing their personal belongings in an area seperated from foods and food contact items. Plans are to organize the rack by the hot water tank and have staff keep their personal belongings on one of the racks.
(Critical) One of the cream containers had a noon expiration time, while the other had a 6pm exp time. Inspection was conducted at 12:30pm, therefore the noon pitcher should have been changed out. Be sure staff are paying attention to this requirement. Corrected by discarding product and using cleaned pitchers marked with correct time on them.
Please replace the bowed ceiling tile that has water stains on it.
Clean the dust build up on the storage racks and items stored on the racks that are above the 3 comp sink.
Obtain and use food grade storage containers. The "sterlite" containers are not made of food grade plastics.
(Critical) 2 working pitchers of skim milk were found outside of refrig and at 93*f. Only use one pitcher at a time for your 2% and skim milks and change out every four hours to cleaned pitchers. Corrected by discarding the 2nd pitcher.
(Critical) I found black mold on the deflector plate within the ice machine bin. Staff need to be cleaning and sanitizing the bin at least once a month to prevent the growth of mold. Empty out all ice and clean and sanitize. I will be back first week of january to inspect this.
Plastic cups stored to close to the front handwash sink and exposed to contamination. Store cups outside of the splash zone of the handsink.
I found coats hung from one of your food storage racks in the back. Provide a spot for staff to hang up their personal belongings.
The ice bucket was found cracked and chipped. Obtain a new, food grade ice bucket.
A mop was stored leaning on a dry good rack close to portion cups for storing foods. Keep mops away from foods or food contact items. Corrected.

(Critical) Tested dishmachine and found no sanitizer detected in the final rinse. Upon further inspection, found that the feed tube was not within the dispenser feed port. Staff must be checking machine with test papers in morning before first use to assure dispensing 50-100ppm and if not, troubleshoot the problem. Corrected by reconnecting feed tube to dispenser on back of machine.

Front sanitizer bucket was tested and detected no chlorine. Keep at 50-100ppm. Staff need to be using test papers to verify sanitizer strength and change out when dropping below 50ppm. Corrected.
There was no sanitizer bucket made up at the front counter and a wiping cloth was sitting out on counter. Always have a sanitizer bucket made up with 50-100ppm chlorine and keep cloth in solution between uses. Also, i did not detect any sanitizer in the back area wiping cloth container. Staff need to use test papers and keep at correct levels.

The storage racks above the 3 comp sink are dusty. Staff need to be cleaning them more routinely to preclude the build-up of dust and dirt.
