(Critical) Found ready to eat (rte), time/temperature control for safety (tcs) food, portioned cups of garlic sauce in the walk in cooler without 7 day (day prepared + 6 days) datemark. Found rte, tcs food, packaged rice pudding and cups of cream caramel in the dining room dessert display cooler without 7 day datemark. Pic corrected by providing 7 day datemarks for noted items and has been instructed to monitor and ensure rte, tcs food is datemarked. This is a repeated violation and a datemarking risk control plan has been issued. ,

(Critical) Found a manual can opener stored in a can opener holder on the edge of the prep table soiled with accumulation and build up. Pic corrected by taking can opener to the dishwashing area to be washed, rinsed, and sanitized. Pic has been instructed to monitor and ensure can opener is cleaned after each use.

(Critical) Found a cardboard box which previously held raw chicken used to hold/store ready to eat foods (pita chips). Pic corrected by discarding pita chips and cardboard box, and is now using a stainless steel pan to hold pita chips.

(Critical) Found ready to eat (rte), time/temperature control for safety (tcs) food, numerous portioned containers of rice pudding without 7 day datemark in the 2 door reach in cooler. Pic corrected by providing 7 day datemark (day prepared + 6 days) for rice pudding, and was reminded to datemark all rte, tcs food lasting more than 24 hours.

Found a long handled wire brush used to clean equipment stored on the floor by the grill. To correct clean wire brush and store in a protected manner.

Found no thermometer in the 2 door reach in cooler. To correct provide a internal hanging thermometer in cooler.

Found the back kitchen door propped open without screen door. To correct either keep door closed or provide a screen if door is to be left open.

Found a covered pan of rice cooling in the walk in cooler. Pic corrected by removing part of the plastic cover to facilitate heat transfer.

Found the hood filters and surfaces of the cooking hood soiled with grease and build up. Found the interior of the microwave oven soiled with accumulation. Found the exterior doors of the 3 door prep top cooler soiled. To correct clean all noted areas and clean on a schedule to preclude accumulation and build up.

(Critical) Found time/temperature control for safety (tcs) food, hommous, baba ghanouge, beef and chicken kabobs, grape leaves 50°F to 53°F, in the top and bottom portions of the 3 door prep top cooler. Pic corrected by discarding all tcs food, and then discovered there was no power to cooler. Pic has been instructed to monitor and verify cooler can hold tcs food at 41°F or lower before using cooler, and ensure there is power to cooler. ,

Found the walls in various areas of facility with holes (possibly for running lines). To correct repair walls to be durable, smooth and cleanable.

Observed a broken ice machine outside of the back door. To correct properly remove broken ice machine

Found no manager certification in facility. Pic states she has taken a manager certification class and is waiting for results/certification. Please inform me when certification is obtained.

Found covered food storage bins/containers under the shelf of the prep table on the cooking line. To correct store storage containers on shelf at least 6 inches off the floor.

Found the lights above the dishwashing area not working. To correct repair/replace lights.

Found facility using a cooler as an ice bin which doesnot have a drain. To correct either provide an ice bin with a drain line or a cooler with a drain, so melted ice may drain.
