(Critical) Improper re-heat for hot holding. I found melted cheddar cheese at 42*f after heating for 1 hour and chili sauce at 60*f after 1 hour reheat. Leftovers need to get to 165*f of greater in less than 2 hours. You will need to re-heat all your leftovers in the microwave to 165*f or greater. Temp product to assure you hit this temp and then you can transfer into hot wells and hold at 135*f or hotter during the service period. Corrected by following the above procedure from now on!!!
(Critical) I found a gallon of cole slaw with an expiration date of 7/15. . . Please watch use by dates and discard accordingly. Corrected by discarding.
I observed frozen soup being thawed on a container of water without cold water running in container. Be sure using cold water running when thawing product.
