Corrected by relocating to the storage shelf. Provide a commercial door stop for this door instead of using a food container

Torn/split door gaskets were observed on the two door low boy and the two door upright coolers. Provide replacement door gaskets to provide a smooth and easily cleanable surface

Observed two pails of sanitizer from this morning with wiping cloths in them to have no detectable amount of quat sanitizer with the test papers. Corrected by providing fresh quat sanitizer at 300 ppm

Observed misc. Items on the floor located under the front counter and the espresso station.

(Critical) Observed the quat sanitizer prepared in the three compartment sink to be mixed way too strong (+/-500 ppm). Corrected by diluting to 200 ppm as per the label directions

Observed two wiping cloth sanitizer buckets to be too weak. Corrected by providing fresh sanitizer at 200 ppm

Observed the possibility for your customer foods to be contaminated by employee foods. Store all employee food/beverages below all customer foods in the two door upright refrigerator in the back kitchen

Observed the two metal stem food thermometers in the running water well to be out of calibration. One was 6f too high and the other was 10f too high. Recalibrate to be accurate

The wet mop head was observed resting on the bottom of the mop sink. The current mop holder will not support the weight of the wet mop head. Provide another hanger so the wet mop head is supported in the air to facilitate faster drying

Ensure an accurate quat sanitizer test kit is being used by staff to verify the proper quat sanitizer concentration is provided

(Critical) Observed four cheddar roast beef sandwiches to be beyond their expiration date. Corrected by discarding. Ensure foods are ordered in reasonable quantities and that staff are rotating product to use the oldest items first

1) mop sink faucet: the back flow preventer cap is missing and the back flow preventer is leaking. Replace the internal pieces and provide a new cap. 2) observed a slow leak from the overflow tube on the hot water heater pressure relief valve. Repair as needed

The ice machine is in need of more frequent cleaning. Thoroughly clean and sanitize this unit now and place on a more frequent inspection time-frame, cleaning as needed

Observed a wet wiping towel stored in a dry bowl at the espresso machine station. Corrected by relocating the towel to a sanitizer pail

Observed the door gaskets to be torn on all four doors of the two, two door coolers at the beverage making area. Provide replacement door gaskets to be easily cleanable and so food debris isn't trapped

Observed the drain serving the front counter beverage station (dipper well, espresso machines) to be in need of cleaning now and more frequently in the future to remove debris build-up that can attract pests or create odors

(Critical) Observed a barista not wash their hands as needed (after using a smart phone, clearing some dirty dishes, after going outside, etc. ) prior to making food/drink for customers. Corrected by discussing this issue with the employee and by the employee washing their hands

1) the paper towel dispenser in the back room by the dish washing station is damaged and the cover does not stay closed making it difficult to dispense the paper towel. Repair or replace this paper towel dispenser as needed. 2) observed torn door gaskets on both of the front counter area two door low-boy coolers. Replace these gaskets to provide a cleanable surface that does not collect food debris

Observed one of the metal stem food thermometers to be out of calibration by 7 degrees. Corrected by re-calibrating the thermometer

Again observed the wiping cloth at the beverage making station to be stored in a dry bowl, and a wet wiping cloth stored under the steaming pitchers. A fresh container of quat sanitizer was provided in which to place the towel from the dry bowl

Please hang up and organize your brooms and dust pan at the back area hand washing sink location

Observed the clear plastic steaming pitchers stored inverted on a wet towel on the counter. Provide a drain mat to store these pitchers on instead of the wet towel that can allow bacterial growth

The ice making machine and the ice deflector shield in the ice bin below are in need of cleaning again. Please clean these areas now and more frequently in the future

(Critical) The dishes were not being sanitized because an employee had connected a bottle of dish washing soap to the sanitizer pump spout at the sanitizing basin of the three compartment sink. Corrected by replacing the soap bottle with a bottle of sanitizer, purging the soap from the dispenser pump and verifying a proper concentration of quat sanitizer (200 ppm)

(Critical) 1) the interior of the ice machine is due for cleaning and sanitizing to eliminate the pink and brown growth. 2) observed food handling equipment (pitchers for blended drinks, measuring cups, etc. ) stored inverted on wet wiping cloths. The wiping cloths may not be used to store this equipment on the counters. Replace the wiping cloths with a product that is cleanable and re-useable such as bar matting/drain racks/dri-deck (or equivalent product) to allow moisture to drain away from the equipment.

Again a one gallon container of apple juice was observed on the floor as a door prop. Discontinue using a food container to prop the door open. Install a door stop foot or use a wedge door stop to keep the door propped open if you wish

Observed one of the long metal stem food thermometers for steaming milk to be out of calibration. It was determined the probe portion of the thermometer spins too easily and is coming out of calibration by accident. This thermometer was taken out of use. Provide a replacement thermometer if needed

Observed the air thermometer in the two door low-boy cooler under the blender station to be damaged. Corrected by providing a replacement air thermometer

Observed multiple wet wiping cloths stored on the counters and in dry bowls. Wet wiping cloths need to be stored in a solution of sanitizer between uses to prevent bacterial growth.

1) observed the door gaskets on the two door low-boy cooler (located under the drink blending station) to be cracked. Please replace these and any other damaged cooler door gaskets. 2) the soap and paper towel dispensers at the dish washing area hand sink are damaged and do not close. Repair these dispensers if possible or provide replacement dispensers. 3) observed evidence of condensate dripping on boxes of food in the freezer during the defrost cycle. Repair this unit as needed to prevent condensate from dripping on foods
