(Critical) Severely dented #10 can found on can storage shelf. Evaluate cans prior to stocking, pull any dented/damaged can to return to supplier and store in a separate area away from the useable cans on the can storage racks. Corrected by pulling damaged can(s) off of the can storage rack and placing in the rear by the delivery door for return

(Critical) The glasswasher at the bar is not dispensing sanitizer. Bucket was changed to see if the product was weak and after priming, there was still no sanitizer reading. Glasses must be sanitized with 50 ppm chlorine. Call for repair of unit. Owner indicates unit was just evaluated by ecolab last week and was not properly repaired. Ecolab was contacted and will come back to repair. Manual run glasses through a 3c sink set up with proper concentration of chlorine or the dishmachine in the rear of the kitchen which is properly functioning in the interim.

The thermometer for the beer walk in cooler is missing. Provide a thermometer in order to properly monitor the temperatures for this unit

The light bulbs in the basement storage area and on the pizza prep line are not shielded. Provide shields to protect bulbs to minimize potential for glass fragments to get onto foods or food contact surfaces if bulb should shatter

Cooler drawers have torn gaskets. Once torn they are no longer cleanable. Replace split gaskets.

The condensate from the motor housing is leaking onto the food stored under the housing. Relocate food and repair condensate leak. Note food was relocated at time of inspection

Double stacking containers of foods on top of foods on the top of the prep unit. Discontinue this practice and store containers separately from each other as bottoms of containers me may not be clean.

Assorted domestic equipment in the facility including microwaves, chest freezer, juicers, etc. Replace with commercial equiment that is nsf approved when in need of repair.

The gaskets on most of the cooler doors on the prep line have torn gaskets. Replace split gaskets. Once torn they are no longer cleanable.

The following non food contact surfaces need cleaning: the fryer cabinets, the shelves on the roll cart, the hood filters in the secondary cook area above the pizza oven, the support frame in the cabinet under the heat lamp, the sides of the equipment, clean now and place on a more frequent cleaning schedule

The kickplate for the prep unit is missing. Replace to keep this area clean.

The drawer where mugs are stored at the wait station area is rusting. Refinsh so that the drawer is smooth and cleanable.

The condensate line in the walk in beer cooler in the basement is not wrapped in insulation. Wrap in insulation to prevent condensate from dripping onto beer kegs stored below the line.

Carpeting in the buffet area is not approved. Replace with approved flooring when remodeling this area.

There are large plastic containers being reused for storage of foods other than the original food product that came in the container. Discontinue this practice and use food grade approved containers that are reusable after cleaning.

Tray of food pre portioned in package found on floor in the walk in freezer. Keep all foods a minimum of 6" above the floor to allow access for routine cleaning.

Improper cooling technique as evidenced by moisture on underside of cover of soup and gravies. This indicates that the food was covered prior to reaching 41 degrees f. Keep foods uncovered during the cooling process. Make sure food is chilled rapidly to 70 degrees (from 135 degrees f starting point) in two hours and to 41 degrees f in an additional 4 hours. Food was at 38 degrees f at time of inspection

The pop spray gun at the bar was found to have excess build up. Clean now and place on a more frequent cleaning schedule. Employ proper cleaning procedures and follow through as discussed.
