Found ceiling vent covers soiled with dusty build up. Found the floor under equipment, edges and corners in the front counter and back prep area soiled with accumulation of debris. To correct thoroughly clean vent covers and floor and clean on a more frequent schedule.

Found the hood filters above the kettle soiled with dusty build up. Found the door gaskets of coolers soiled with accumulation of debris. To correct clean hood filters and door gaskets and keep clean.

Found light shield in the hood above kettle missing cover/shield. To correct provide shield or shatter resistant light.

Found the lids of prep top coolers stored on floor leaning against cabinet. To correct store lids on shelf/rack at least 6 inches off the floor.

Found the bottom of several plastic containers on the clean utensil shelf with cracks. To correct replace storage containers.

Found the ceiling air vent covers in the back kitchen soiled with heavy dust build up. To correct clean vent covers and keep clean

Found a spray bottle of water in the baking area without label. To correct label spray bottle of water.

Found the covers/lids of prep top coolers stored on the floor behind the front counter. To correct store covers/lids of coolers at least 6 inches off the floor.

Found the edges and sides by the interior front shield of the ice machine soiled with light accumulation. To correct follow manufacturer's directions and clean ice machine on a more frequent schedule.

Found the tiled floor by the back door in front of the mop sink chipped. To correct repair tiled floor to be smooth and cleanable. Found numerous ceiling vent covers through out facility rusty with peeling coating. To correct replace vent covers.

Found the hood filters and sides of hood(s) of the baking and boiling cooking hoods soiled with dusty build up. To correct clean hood filters and hood and clean on a more frequent schedule

Observed numerous folded, broken down cardboard boxes on the hallway leading to the back door, and the community cardboard dumpster behind building overflowing with cardboard and boxes. To correct increase dumpster pick up frequency and work with neighbors to keep area clean. Note: did not observe or identify any cardboard or boxes from this facility on the floor around dumpster.

(Critical) Found time/temperature control for safety (tcs) food, 2 % milk 47°F in carafe on the self service table. Found tcs food, packages of plain cream cheese 49°F and bacon scallion cream cheese 50°F stacked more than 4 deep in the self service display cooler. Found tcs food, numerous containers of cream cheese 49 to 50°F in food storage containers in the front counter prep top cooler. Found tcs food, numerous containers of various tcs foods 47 to 51°F ( spring mix, cheeses, sprouts, etc. . . ) in double pans in the front counter prep top cooler. Pic corrected by discarding all tcs food above 41°F and has been instructed to monitor and ensure tcs food is held at 41°F. Pic has been instructed to discontinue, stacking food to high, placing packaged containers of tcs food in food pans and double panning food containers, as these practices hinder coolers from holding tcs food at 41°F or lower.

(Critical) Found several cartons of raw shell eggs stored above and next to ready to eat foods in the front counter 2 door work top cooler. Pic corrected by moving raw shell eggs to bottom shelf below and away from ready to eat food.

(Critical) Found a y type shutoff valve installed downstream of an atmospheric vacuum breaker in faucets in upper and lower level mop sinks. To correct either remove y type shutoff valves or install a hose bibb vacuum breaker(s) downstream of y type shutoff valve.

Found the door gaskets of coolers soiled with accumulation. Found the hood filters and hood soiled with dusty build up. Found the exterior of bulk food containers soiled with splash and build up. To correct clean noted areas and clean on a schedule to preclude accumulation.

Found the tiled floor and coving by the mop sink broken with exposed surfaces. Found the tiled floor in the upper level mechanical room damaged with exposed wood. To correct repair and finish floor and coving to be durable, smooth, and cleanable.

Found the light shield above freezer in the back kitchen area missing. To correct repair/replace light shield.

Found the floor under counter, equipment, edges and corners in the entire facility soiled with accumulation and build up. Found the ceiling vent covers and surrounding areas in the back kitchen prep area soiled with splash and dust build up. To correct thoroughly clean floors and clean on a more frequent schedule.

(Critical) Observed rte cooked egg patties in hot holding unit in front prep area with internal food temperatures of 115-120f. All phf must be hot held at 135f or more at all times. Eggs have been in unit for less than 20 minutes per pic so pic corrected by reheating eggs to 165f then returning eggs to unit at time of inspection. Violation corrected. , observed 2/3 cooked rte soups in soup warmer steam table on counter in front prep area with internal food temperatures of 120-126f (water in steam table only 133f). All phf must be hot held at 135f or more at all times. Staff stated correct cooking and reheating procedures, but steam table was set too low. Soups have been in unit for 1. 5 hours so pic corrected by reheating soups to 165f and turning up steam table temperature at time of inspection. Violation corrected

Observed floors under victory upright freezer in back kitchen area with a heavy accumulation of debris/moldy food debris. Also, observed floors under equipment in front prep area with an accumulation of food debris/litter. To correct, please clean these areas now and on a more frequent schedule

Observed the following areas in need of cleaning: *all compressor fan shields on ceiling in wic (accumulation of dust and debris). *prep units in front bagel prep area under insert pans (heavy accumulation of sticky food debris throughout entire unit). *interior non food contact surfaces of hot chocolate machine in front prep area (heavy accumulation of dried on food debris/powder). To correct, please clean all these areas now and on a more frequent schedule

Observed 2 working food containers (nuts) not labeled on shelf in front prep area. Once removed from original packages all foods (including spices, and nuts) must be properly labeled with food common name for accurate employee identification.

All pop nozzles and pop machine components must be washed, rinsed and sanitized every 24 hours and must be clean to sight and touch. (Critical) Main prep line cold holding unit not working properly and not able to hold at 41f or below. Do not use this unit until properly repaired and then inspected by the washtenaw county health dept. I will check this item at follow up inspection. Correct within 10 days. ,

(Critical) Observed several insert pans of rte deli meats, tuna & chicken salads, cream cheeses, rte sprouts and cooked eggs on main prep line with internal food temps of 51f-55f (cold holding unit not working properly). Bruegger's daily temp log indicated that all phf in prep unit was holding properly this morning, but pic admitted that actual food temps were not taken. All potentially hazardous rte foods must be held at 41f or below at all times. Do not use this prep unit until properly repaired and then inspected by the washtenaw county health dept. Pic corrected by discarding all above mentioned food items at time of inspection.

Observed both wiping cloth buckets in front prep area with a concentration of 0ppm of quat. Also, observed a wet wiping cloth stored on prep counter in back kitchen area. All wiping cloths must be completely submerged in an approved sanitizer concentration at all times to avoid bacterial accumulation. To correct, please change and mix wiping cloth buckets to approved concentration (in this case, 200ppm) on a more frequent basis and verify with proper test strips as needed.

(Critical) Observed pan of rte chicken soup in tabletop steam table unit in front prep area with an internal food temperature of 120f. Staff stated that soup was taken out of wic and placed in steam table 4 hours ago. All phf must be rapidly reheated to 165f or more within 2 hours. Please remember that the steam tables are designed to hold temperatures, not for rapid cooking/reheating. To correct, will need to reheat soups in microwave oven or obtain proper soup cooker/kettle as soon as possible. Pic corrected by discarding soup at time of inspection. Critical corrected.

Observed compressor shields on ceiling of wic with an accumulation of dust and debris. Observed soft drink cups being used to dispense and stored in several bagel spices/seasonings in back kitchen bagel prep area. Cups are not approved scooping utensils as they are a source of potential contamination (from employee hands). To correct, please obtain proper scooping utensils as soon as possible and store with the handle extended up and out of food product

Observed wet wiping cloth stored on shelf under make line in bagel prep area not stored in a wiping cloth bucket and observed another wet wiping cloth hanging on side of wiping cloth bucket in coffee prep area. All wiping cloths must be completely submerged in a solution of properly mixed sanitizer at all times to prevent accumulation of bacteria on wiping cloths

(Critical) Observed 8 quarts of 1/2 & 1/2, 2 gallons of milk, pans of rte roast beef, cooked chicken breasts, cooked sausage patties, and sliced tomatoes in 4 door del-field reach in cooler under bagel display in prep area with internal food temps of 55-59f (cooler not functioning correctly). All phf must be cold held at 41f or below at all times. Do not use this cooler to store any phf until properly repaired and then inspected by the washtenaw county health dept. Correct within 10 days. , observed pitchers of milk and 1/2 & 1/2 in dining room with internal food temps of 58-60f. I observed that clean soup cups and beverage lids are stored in a storage rack that needs cleaning. Single service items must be stored in clean, dry locations, free from sources of contamination. Clean this area, right away.

I found that clean tongs are stored in a container that has food debris in it. Clean utensils are required to be stored in clean, dry locations that are free from contamination. Clean this container and wash, rinse and sanitize the tongs.

The downstairs restroom needs to be cleaned. It appears that the restroom cleaning frequency, must be increased.

I found that a soup cup and lid holder in this area, also needs to be cleaned. Increase the cleaning frequency of these single service item storage areas.

The upstairs men's restroom, needs cleaning.

The floor in the main prep area needs cleaning. Floors must be frequently cleaned, to maintain high sanitation standards.
