(Critical) Observed two cans of food in dry storage that were bulging. Food shall be safe, unadulterated, and, as specified under # 3-601. 12, honestly presented. (p) to correct put gloves on and discard the noted food into the garbage. Corrected: person in charge discarded the noted food into the garbage

Observed interior of small two door cooler across from the dry food storage closet to have a food debris build up. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. To correct clean the noted cooler

(Critical) Observed the under side of three mixer arms to have a food debris build up. Equipment food-contact surfaces and utensils shall be cleaned: (1) before each use with a different type of raw animal food such as beef, fish, lamb, pork, or poultry; (p) (2) each time there is a change from working with raw foods to working with ready-to-eat foods; (p) (3) between uses with raw fruits and vegetables and with potentially hazardous food (time/temperature control for safety food); (p) (4) before using or storing a food temperature measuring device; (p) and (5) at any time during the operation when contamination may have occurred. (p) to correct wash, rinse and sanitize the noted areas. Corrected by person in charge washing, rinsing and sanitizing the noted items.

(Critical) Found a container of pastry cream with a date of 4/26 in the low reach-in unit next to the sheeter. Corrected - pastry cream was discarded. Keep diligent about disposing phf on or before there discard date.

Found the two upright refrigeration units to have co-mingled personal use food items with commercial use items. This makes it very difficult to discern what belongs to the business and what does not. To correct - segregate all personal use food from commercial use food items. Having separate units for each is the best way to accomplish this. At the very least, these items must be labeled personal use and stored on a separate shelf from commercial food

Found self closure on restroom door not functional yet. To correct - complete installation of self-closer

Found gaskets on the older upright refrigerator to have an accumulation of food debris and mold on them. To correct - clean now and keep on a more frequent cleaning schedule

Found both storage rooms with boxes of single service items stored directly on the floor. Also found mixing bowls stored upright under the baking mixing table. To correct - all items must be stored at least 6" above the floor to facilitate proper cleaning. All pots and pans must be stored inverted to prevent exposure to dust, debris and splash.

Found the gaskets on the older upright refrigeration unit to have cracked gaskets which make it difficult to clean properly as evidenced by the presence of mold within the cracks. To correct - replace these gaskets on this unit.
