(Critical) A large corned beef that was cooked up from the night before was still at 50*f in the walk in cooler. Staff did not cut meat into smaller portions and cool it properly. Have a written cooling procedure for me when i come back for a re-inspection in 2 weeks. Corned beef was discarded.

(Critical) Your spray rinse arm is not air gapped due to your spring loss of tension on the hose. You need to install a new hose and spring so the spray nozzle terminates at least 1" above the top of the spill rim on the 3 comp sink. I will be back in 2 weeks to verify you have this.

(Critical) The ice machine drain line is required to be air gapped before entering the sewer drain. Have this done within 10 days and take a picture and e-mail it to me by 9/20/13

Repair the leaking pipe under the 3 comp sink.

You have several excessively grooved cutting boards that will need to be replaced or planed down.

Please thoroughly organize your "record" closet. Put all items pertaining to your foodservice on one side and all records, equipment, etc on the other side. Also, i want you to get all things off the floor.

The kitchen floor will need to be replaced, as the sub-floor is sagging/rotting and causing the tiles to buckle. This will need to be done by your next inspection in 6 months.

You are not approved to store any of your foods, beverages, food contact items in your basement. . . As it is not clean and sanitary in there(michigan basement).

You will need to replace/repair the broken ice machine lid/door.

(Critical) A tray of raw shell eggs was found stored above a bag of bagels in the walk in cooler. Store raw animal product on bottom shelf. Corrected by doing such.

(Critical) Both handsinks in the kitchen are not stocked with paper towels. There are no paper towels in the store to re-stock. You must always have back up stock of towels so you never run out! temp coreection using tri-fold napkins.

(Critical) All the handsinks are dirty! the front handsink has empty beverage bottles in them and the one where the grill is has soiled cloths in the basin. Handsink are to be used exclusively for handwashing and are to be unobstructed and kept cleaned! corrected by cleaning the sinks and removing obstructions.

(Critical) I observed the cook bare hand contact finished sandwiches. When i told him he needs to be wearing gloves, he said they don't have any. This is another stock item that you must always have in stock!!!! purchase some immediately and i will be back to verify in 10 days.

This store is cluttered and disorganized. You have not had a dry storage room for over 6 months and no further construction has been done on it. You have one month to finish this and i will be back to see it in full use to organize things that are cluttered all over your store. You also need to keep your bottle returns in a safe location somewhere, not where food is stored and being prepared (such as the basement).

Repeat violation 2 times. You need to get all bagged items into sealed food grade containers. This is the 2nd time you have been cited this.

Tableware is being stored with food contact end up. Always store handles up to prevent contamination of tableware.

Your store is very dirty. Staff must be cleaning on a daily basis. Floors, coolers, equipment all must be kept cleaned.

The racks in the walk in cooler are rusty and corroding, making them not easily cleanable. You need to replace all of them, or have them refurbished.

Provide a small wastebasket at each handsink for paper towel disposal

The 3 compartment sink is filthy. Staff left it this way on sunday and store was closed on monday. You must be thoroughly cleaning this after uses before closing for the day.

The mop bucket and mop wasnt cleaned after last use and mop needs to be hung to dry.

(Critical) I found a container of single service coffee creamers that require refrigeration at 66*f. Must be held at 41*f or less. Staff left out of refrigerator. Corrected by discarding this batch and always keeping in cooler. Suggest shelf stable creamers.

Repair the leaking pipe coming out of the 3 compartment sink.

Opened bagged product, such as sugar, flour, etc, needs to be put into a container with a cover.

Provide light shields and end caps or shatterproof bulbs on the lights in the beverage coolers in the retail store.

Paper towels were not stocked at the main cook line handsink. Staff need to re-fill after depleting. Corrected by stocking.

(Critical) The house made ranch dressing was well beyond the 7 day use by date. (dated 2/16). Staff need to put use by dates on product and monitor daily for any expired foods. Corrected by discarding.

Observed cutting boards that were no longer easily cleanable and soiled. Replace or grind down so grooves are removed.

Provide a thermometer for the upright cooler in the retail store that has hommuos in it.

The carpet will need to be removed from the dry goods storage room. Floors must be tiled so it is easily cleanable and can be mopped

Provide a shatterproof light bulb or install a light shield over the light in the dry goods room.
