(Critical) Person-in-charge not familiar with employee health reporting requirements. The permit holder shall require food employees to report to the pic information about their health and activities as they relate to diseases that are transmissible through food. Corrected at time of inspection: by discussing employee health reporting requirements with pic, including reportable symptons and the big 5 illnesses. Provided pic with copy of the mda employee health poster to review with all staff

(1) sanitizer concentration low in wet wiping cloth solution for counters. Please monitor throughout the day with your quat test kit to assure proper sanitizer concentration. (2) no separate sanitizer solution set up for milk wands. Please provide separate sanitizer solution for milk wands at proper quaternary ammonium concentration.

(Critical) Milk carafes not being properly cleaned and sanitized between uses. Food shall only contact surfaces of equipment and utensils that have been properly cleaned and sanitized. Corrected at time of inspection: per pic milk carafes are rinsed between uses. Employee properly washed, rinsed, sanitized and drained / air dried carafes. Facility needs a second set of carafes while one set is being cleaned properly the other set can be used at the self-serve area; unless facility chooses to have a period of time without milk carafes set up at the self-serve station while they are being properly cleaned and sanitized

(Critical) Observed improper policy for time as a public health control for milk carafe. If time without temperature control is used as the public health control for a working supply of potentially hazardous food written procedures shall be available and followed properly. Corrected at time of inspection by discarding skim milk found at 44°F in carafe; 1/2 & 1/2°Found at 41°F. Daily chart for milk carafes had not been marked today; facility uses a 3 hour discard time. The discard time could also be written on the carafe (3 hours from the point in time milk removed from temperature control), same as time written on coffee pumps.

(1) wet wiping cloths front counter stored improperly. Please provide enough wet wiping cloth solution in bucket to totally submerge cloth once wet. (2) please provide separate wet wiping cloth solution at proper sanitizer concentration for milk wand wiping cloth

Ice transfer bucket stored improperly. Please invert to protect against potential airborne contamination
