(Critical) Proper handwash cleaning procedure could not be followed due to lack of hot water availability at front counter handwash sink. Food employees shall clean their hands and exposed portions of their arms for at least 20 seconds, using a cleaning compound in a handwashing sink that is equipped to provide water at a temperature of at least 100°F and a hand drying device. Once opened, prepared or removed from freezer these food items shall be clearly marked to indicate the discard date. Critical corrected: at time of inspection some food items (tuna salad, chicken salad, opened milk etc) had incorrect month; changed to proper month; some food items (sliced deli meats, all quiche, dressing made in house) had no date mark; added proper discard date; date prepared and date removed from freezer for sliced deli meats known by pic. Facility is open monday - friday ; all prepared food items are discarded end of friday

(Critical) Some potentially hazardous food items found at improper temperature in 2 door universal/nolin refrigeration unit front kitchen. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above. Critical corrected: at time of inspection discarded all potentially hazardous food items found at improper temperature. Variation of temperatures throughout unit; bottom holding colder than top section. Pic adjusted unit at time of inspection and relocated food items that may have been blocking cold air flow. Unit maintaining at 36°F at end of inspection. Please continue to monitor and check food temperatures on top and bottom of unit to assure all food maintaining at 41°F or below at all times.

Cutting board front counter prep unit needs to be replaced or resurfaced. Cutting boards have been purchased; need to be installed

These areas in need of cleaning: underside of individual pop dispensing units at pop machine front counter, interior toaster oven, interior bottom some cabinets front counter, handle area some drawers and cabinets, some refigeration door gaskets, handle area bulk food bins rear kitchen and shelving unit next to dishmachine (recent food spill onto some shelves). Please clean now and place on routine cleaning schedule.

Interior floor drain near make line front kitchen and mop closet floors in need of cleaning. Please clean now and as often as necessary to maintain in clean condition

Clean linens found stored improperly in mop room. Please rearrange in mop room to store clean linens a minimum 6 inches above floor on shelving that allows easy cleaning underneath

Some refrigeration door gaskets and upright freezer door gaskets in poor repair. Please replace to provide good seal and so smooth and easily cleanable

Some light bulbs burnt out in rear kitchen near kitchen entrance. Please replace to provide adequate lighting in this area

Front counter handwash sink not accessible for handwashing. Handwash sinks shall be accessible at all times for handwashing

Some particle board shelving with contact paper front kitchen worn. Please replace with smooth, easily cleanalbe shelving units
