(Critical) Observed sanitizer concentration in wiping cloth bucket in dishwashing area at +/- 1000ppm of quat. Please remember that sanitizer can become toxic at excessive levels. To correct, please follow manufacturers directions when mixing wiping cloth bucket and verify with test strips as needed. Pic corrected by remixing sanitizer bucket to 300ppm at time of inspection. Violation corrected

Observed 3/4 trash dumpster lids on outside trash dumpsters left open after use. All dumpster lids and doors must be shut after use to prevent entry of unwanted pests, insects and birds

Observed missing and/or damaged sink stoppers in 3 compt sink. To correct, please replace all stoppers in 3 compt sink as soon as possible

Observed missing thermometer in milk cooler and damaged thermometer in 2 door upright cooler in prep area. To correct, please obtain new thermometers for these coolers as soon as possible

The double door continetal cooler is not working properly. Ambient air temperatue of unit is 54 degrees f. There was a minimal maount of ph food in the unit at time of inspection includeing salads and spinach which all temped at 41 degrees f or below and cheese and 41 degrees f or below. It is probable that this was all relocated to this unit for lunch rush from a mccall upright cooler in the office. If not than the unit may be going thru a defrost cycle during lunch rush. Call for rpair of unit. Do not store any potentially hazardous foods in this unit until repaired and capable of maintaining ph foods at 41 degrees f or below

The stemaer is not functioning and must be repaired in order to hold food at 135 degrees f or below. At time of inspection all food was on top of warmer at 135 degrees f but will not hold hot enoufh over time. Repair steamer. Correct asap by 5/8/2014

(Critical) The handsink was inacessible for routine handwashing by plastic bags, etc. Put into the handsink. The handsink basin may not have anything in it so that the handsink is available for routine handwashing at all times. Pic indicated that the sink doesn't work and shut off valves on bottom of sink attempting to turn it on. Sink was working at time of inspection, providing both hot and cold water and not leaking. Sink was bone dry under the bags evident that this sink is not routinely used.

(Critical) Hamburgers were found at 117 degrees f on the roll cart waiting to be served. Potentially hazardous foods must be maintained at 135 degrees f. The steamer was not on. Pic indicated that he takes the food out of the oven puts it on the roll cart awaiting service and serves off roll cart instead of using steamer. Pic indicates that the steamer doesn't hold the food at proper temperature. Steamer must be repaired/adjusted to hold food at 135 degrees f or above. Corrected by putting the food back into the oven and reheating to 165 degrees f prior to service.

The steamer was not plugged in at time of inspection. Pic indicated that the steamer does not maintain food at 135 degrees f or above so he does not use it. Repair/adjust/replace steamer as indicated so that the food can be held hot at the counter for service after proper cooking of food. Putting food on the roll cart awaiting service is prohibited.

(Critical) Large roll cart parked directly in front of the handsink. Relocate roll cart to another approved designated location so that the handsink is accessible for routine handwashing at all times. Corrected by relocating roll cart away from the handsink at time of inspection

(Critical) Thermometer for the milk cooler on the outside is broken. The interior thermometer is found under the milk crate where it is not readily accessible. Relocate thermometer to an approved location. In addition both cooler thermometers are broken and must be replaced with thermometers that are intact. Correct by providing new thermometers for these units

The food employee in charge of the kitchen is not certified in food safety. Employee must register for an approved certified manager class such as serv safe or equivalent within 30 days. Fax copy of registration of the food employee into a certified food manager class within 30 days to perri boman at 734 222-3930

Food employee not wearing effective means of hair restraint during food prep. All food employees must employ proper means of hair restraint during food prep such as hair nets, ball caps etc. Provide and use hair restraints as required

Roll cart stored in front of the new handsink blocks access for routine handwashing. Relocate the roll cart so that the handsink can be routinely accessed for proper handwashing. Corrected by relocating the cart between the handsink and the triple sin.

(Critical) Handsink missing in the kitchen. Double using the 3c sink as a handsink. Provide handsink separate from the 3c sink. Scheduled for administruative conference for 5/16/2011 pending approval of proposal ot install in july 2011 when school is out. Correct asap pending extension/approval to install sink. Temporary to go in in the interim.

Thermometer for the upright cooler is missing. Provide a thermometer for this unit in order to properly monitor the temperatures for this unit.
