(Critical) Observed tuna fish salad in the reach in cooler by the main cook line to be at 51*f. Person in charge indicated that the tuna fish was prepared approximately 2 hours prior. Proper cool down time from food made at ambient temperature is 4 hours to minimize the growth of bacteria. Corrected by moving the tuna fish salad to the upright freezer to rapidly chill down to 41*f or lower. The tuna fish salad was transferred to a shallow pan to allow for quicker cooling. Tuna fish salad was rechecked at end of inspection and temped at 40*f. Observed par cooked bacon stacked on a plate adjacent to the grill found at 70*f. Bacon was placed into prep unit to cool down to 41*f. Observed pre cooked chicken in the walk in cooler in a tightly sealed container with heavy condensation under the lid. Chicken found at 44*f, pic moved container of chicken to wif for rapid cooling. Corrected
(Critical) As per discussion with pic, mopwater is being discarding into sink that is being used as dual use as a food prep sink and mop sink. This is prohibited. At time of inspection, potatos were cooling in the sink indicated as the mop water water dump sink. Corrected by discussion with pic to cease this activity immediately. If mop sink cannot be installed due to space limitations, a variance must be issued for an approved alternative waste water disposal method. Corrected

Observed a container of whipped butter packages to be at room temperature. The container was sitting on top of another container with ice in it but the ice only had contact with the bottom of the whipped butter container. Whipped butter must be kept at 41*f or lower. Corrected by discarding whipped butter packages into the trash. Observed multiple slices of pies (cream pie and cheese cake) in the upright pepsi cooler by the front door to be at 55*f. Cold hold foods shall be maintained at 41*f or lower. Corrected by discarding the pies into the trash. The upright pepsi cooler is not able to maintain proper holding temperatures. This unit shall remain out of commission until it can be serviced and be able to hold foods at 41*f or lower. Pic called service technician to repair unit during inspection. Corrected

Observed the hood filters that had been just previously cleaned to not be installed in the hood system. Pic indicated that the filters were still drying. The hoods were on the floor in the main kitchen. To correct, please reclean the exterior surfaces of the hood filters and place into the hood system so the system can funtion as intended.
(Critical) Provide a needle tipped, digital food thermometer in the kitchen to verify proper cooking temperatures of thin foods. ,

The front counter display cooler was not maintaining phfs at 41f or below. This unit had a thick dust layer on the condenser coil. The owner removed this dust layer and made an adjustment to the temperature control dial. Assure this unit can maintain foods at 41f or below prior to placing any phfs in it
(Critical) Observed a spare order of hash browns/american fries on a plate out at room temperature. Corrected by discarding these cooked potatoes. In the future, please find a way to hold them hot (steam table, on a cooler portion of the griddle, or in a double pan set-up on the griddle, etc. ) or cool them down and hold at 41f or below.
(Critical) Observed chicken lemon rice soup made a few hours ago in the walk in cooler in three uncovered metal containers (two soup pots and one deep 1/3 pan). These containers are still too large for rapid cooling of this thick soup. Corrected by placing into three shallow hotel pans and placing back into the walk in cooler. Utilize this method from now on to rapidly chill this soup (and other similar foods)
The interior of the ice machine and the soda dispensing spouts are over-due for cleaning. The soda spouts were removed, disassembled and cleaned during the inspection. Schedule the cleaning of your ice machine with your refrigeration contractor
The drain pan basin for the dish washing machine waste water has not been cleaned in a while. Thoroughly clean this basin now and several times per week to remove food debris build-up that can cause odors and be a breeding area for flies
(Critical) The menu has not been revised yet to eliminate the consumer advisory on the children's hamburger/cheese burger, as well as eliminating some extra (unnecessary asterisks on the rest of the menu). The grill line exhaust hood filter section above the deep fryer area is not the proper size to fit in this portion of the hood. Actually, it is installed sideways, so as to fit into this space. The sections of the filter need to run vertically and not horizontally as the current one does. Provide a properly fitting replacement hood filter section (like the left end of the hood) for this portion of the hood
A connection on the water line located under the back corner of the ice making machine ice storage bin has a slow leak. Repair as needed to eliminate this moisture source
Dish washing machine wash arms: observed several of the spray arm openings to be plugged with debris. Also, the sidewalls of the dish washing machine drain pan to have accumulated debris on them. Thoroughly clean these areas on a daily basis.

Corrected by diluting the solution to 150 ppm. 2) observed an unapproved one gallon container of bleach (this bleach does not have an epa registration, nor does it have use directions for sanitizing equipment) provided in the kitchen. Discontinue the use of this kind of bleach and provide bleach that is approved for sanitizing food contact surfaces
1) some areas under the deep fryer to have significant fryer oil build-up on them. Please clean this area now and more frequently in the future. 2) part of the shaft of the food processor blade (used for slicing the potatoes) had some build-up on it. Clean this area now and more frequently in the future

The ice making machine is narrower than the top of the ice bin and the provided stainless steel cover is sagging in the middle and is not properly sealed. The owner has a large piece of stainless steel in the basement that can be used as a splash guard for this location/purpose.

Corrected by reheating this food on the range burner to 165f prior to returning the food to another preheated section of the steam table.
