(Critical) Observed employee wash his hands incorrectly in prep area after handling raw fish. Employee handled raw fish with hands, then quickly rinsed his hands in handsink (for maybe 5 seconds) then dried hands on a common towel laying on counter. Employee could not wash his hands properly anyway as there was no soap or paper towels at any handsink in kitchen or sushi bar area. First, all handsinks must be stocked with soap and paper towels at all times for proper employee handwashing. Second, employees must thoroughly wash his or her hands for 20 seconds and use disposable towels to dry hands (common towels are not approved). (Critical) Observed squeeze bottle of rte housemade spicy mayo sauce on shelf across from 3 compt sink with internal food temperature of 60f (sauce has been out for 1 hour or less per owner). Servers use this sauce for topping some finished food products. Housemade sauces are considered potentially hazardous and must be kept at 41f or below at all times. Some soap observed in dispensers, but would not dispense consistently (dispensers appears clogged up with sticky soap residue).
