Observed back door sweep in poor repair (stripping is damaged and creating an open gap along bottom corner of back door). All doors and outer openings to restaurant must be tight fitting and sealed to prevent entry of unwanted pests and insects. To correct, please repair door sweep as soon as possible

(Critical) Observed employees not utilizing 3 compt sink properly for warewashing and sanitizing operations. Staff are washing dishes/equipment in the sanitizer compt and sanitizing equipment in the wash compt (which is directly plumbed to the grease trap). Please educate all staff on proper 3 compt sink set-up as soon as possible. Note: the wash, rinse and sanitize stickers on the sink compartments are labeled correctly. Pic corrected by remixing 3 compt sink properly at time of inspection and will educate all staff as needed. Violation corrected

(Critical) Some overstacked trayed meat items found on top of sandwich make line at improper temperature. Potentially hazardous food shall maintain at 41°F or below or 135°F or above. Corrected at time of inspection by discarding overstacked trayed meat items found maintaining >41°F. Items on top of stack found at 49°F. When trayed meat items are prepared please do not prep to the top of the pan, the tray and paper insulate the food from the cold sides of the pan. Please use your food thermometer to assure all potentially hazardous food items are maintaining at proper temperature, 41°F or below at all times

Please relocate existing ambient air thermometer or provide additional ambient air thermometer for one door upright reach-in-cooler in dining area and place for easy viewing. Existing ambient air thermometer is located on the top shelf in the rear of ric; beverages on top shelf obstruct thermometer

Some single-service food packets found stored in cabinet under handwash sink front counter. Please do not store any food items under drain lines to prevent potential contamination

Some clean black insert pans and bread forms found stacked wet. Please air dry/drain these items prior to stacking. An additional shelf or rack may be necessary to provide enough clean drainboard area for drying properly prior to stacking

Dumpster lids found in open position. Please close dumpster lids when not in use

These areas in need of cleaning: handle are microwave oven front counter, handle area reach-in-cooler front counter and handle area encore oven front counter. Please clean now and as often as necessary to maintain in clean condition
