Health Report - 11/23/2010 (2 critical incident(s))

(Critical) Observed a container of expired sliced turkey and cole slaw that was made on 11/18 and dated 11/29. You need to be sure expired foods are discarded on time and dated properly. Corrected by discarding these products.

(Critical) Observed clam chowder at 115*f in an unnapproved crock pot. Must be held at 135*f or hotter in your approved steam well. You are not approved to serve more hot foods than your steam well can hold. Corrected by discarding clam chowder and not using this crock pot any longer.

Move the paper towel dispenser in the dishwash room so it is close to the handsink.

You folks need to clean better in hard to reach areas under all the equipment in the kitchen and clean the storage shelves more often.

The handsink in the dishwash room was obstructed by several tools stored in the sink basin. Keep sink accessible and be sure staff are using it!!!!

Keep chlorine test papers available at all times.

Clean the interior of the microwave often throughout the day.

(Critical) You need to properly air gap the drain lines again out of the 3 comp sink and the ice bin. It would be easiest to do this in the basement. I will be back in 2 weeks to verify this has been done and is functioning properly.

(Critical) A pan of raw ground beef for meat loaf was stored above ready to eat foods in the walk in cooler. Also, raw chicken was too close to the pickle buckets. Get at least 6" of seperation with raw product to the pickle buckets. Corrected on site by doing the above.

(Critical) The cutting boards/food prep surfaces were being cleaned and sanitized only once a day. They need to be cleaned every 4 hours or less. Also, the meat slicer needs to be washed with detergent and rinsed and not just sanitized when cleaning it. I will be back in 2 seeks to verify this is happening.

Please empty garbage more often.

Please defrost the mug freezer at the bar more often.

Repeat violation 2 times. You need to paint or varnish the particle board shelves that you have in the walk in cooler.

You need to put a tight fitting screen in the basement window well.
