(Critical) Rice and beans with pico de gallo found in hot holding unit at improper temperature. Cooked and cooled potentially hazardous food shall be reheated to a minimum 165°F within 2 hours. Corrected at time of inspection by reheating rice and beans on stove top to >165°F. Rice was found at 64°F and beans at 70°F in hot holding unit. The hot holding unit is not a heat and serve unit. Discussed reheating with employees. Since both of these food items were cooked and cooled yesterday they will need to be reheated to 165°F before placing in hot holding unit to maintain hot at 135°F or above. Facility also reheats soup each morning to >165°F in the microwave or makes soup fresh on the stove top before being placed in soup hot holding units to maintain at a minimum 135°F or above (facility has 3 soup hot holding units)
