Found tcs food, cartons of milk 46°F, various yogurt 49°F, in the front areas of in an overloaded 1 door under the counter cooler. Pic temporarily corrected by discarding all milk and yogurt. To correct verify cooler is working, load cooler with appropriate amounts of food, and monitor and ensure tcs food is maintained at 41°F. ,

(Critical) Found cold time/temperature control for safety (tcs) food, hard boiled eggs 60°F, in a container above an ice bath. Employee temporarily corrected by discarding eggs. To correct store eggs in a ice bath that completely surrounds eggs. Found cold tcs food, waffle mix 50°F in waffle mix dispenser. Employee temporarily corrected by discarding waffle mix. To correct prechill waffle mix to 41°F, and ensure waffle mix dispenser can hold product at 41°F. Found cold tcs food, a canister of whipping cream/topping 70°F on the counter top by waffle machine. Employee temporarily corrected by discarding whipping cream. To correct store cold tcs food at 41°F, that is store whipping cream in cooler, or an ice bath that completely surround canister. Note: a time control policy may be used for these items. ,

(Critical) Used a quat test kit and found the sanitizing solution flowing from the quat dispenser at about 100 ppm below manufacturer's recommended range of 150 to 400 ppm. To correct call for repair and manually mix sanitizer to manufacturer specification, until dispenser is repaired. ,

Found stacked cases of waffle mix stored on closet floor in the break/storage room floor. To correct store waffle mix on shelf at least 6 inches off the floor.
