Employees will begin pre-chilling cans of tuna in addition to salad dressing, onion and celery to assure tuna salad is cooling within 4 hours from preparation time. No cooling violation cited today since time of preparation in relation to time of service less than 4 hours.

Critical corrected: at time of inspection discarded all potentially hazardous food (mainly dairy including milk, half & half, yogurt, various cheeses, raw shell eggs and some leftover items) found at 49°F - 50°F in deerfield household, 50°F - 51°F in trellis pointe and 46°F - 47°F in arbor view. Pic contacted maintenance to check all refrigeration units. These units are ordered out of service for the storage of potentially hazardous food until they are repaired, reinspected and capable of maintaining food at 41°F or below.

(Critical) Observed improper manual warewashing procedure. You need to use the 3 sink basins to wash kitchenware in. Were using a gallon bucket for the detergent process. Corrected by setting up and using the triple sink basins to wash, rinse and sanitize.
The display cooler at marketplace is holding around 45*f. Needs to hold below 41*f. Put a couple of cups of water in this unit and take temps of water for 2 weeks and fax over cooler charts to me.
