Found rte, tcs food boxes of meat pies in the 3 door prep top cooler without 7 day datemark. Found rte, tcs food, cups of rice pudding and cream caramel in the 1 door glass reach in cooler without 7 day datemark. Pic corrected by providing datemarks for all noted foods. This is a repeat violation and a risk control plan must be submitted.

Found various desserts (mini roses, fingers and almond cake), and portioned chocolates without food allergen information available. To correct provide ingredients and allergen information available upon customer request.
Found the door gaskets, interior surfaces, and exterior door surfaces of the 3 door prep top cooler, soiled with splash, build up and accumulation. To correct clean cooler and clean on a more frequent schedule.
Found no thermometer in the 1 door glass reach in beverage and dessert cooler. To correct provide an internal hanging thermometer.
(Critical) Used a chlorine test kit and found the dishwashing machine not chlorine sanitizing dishes, and the sanitizer bucket supplying the dishwashing machine empty. Pic states they have ordered dishwashing chemicals, and has been instructed to use the 3 compartment sink to wash, rinse and sanitize dishes temporarily.

Pic temporarily corrected by setting cooler to a colder setting and placed tcs food in ice baths. Pic has been instructed not to use this cooler to hold tcs food until repaired/replaced to hold tcs food at 41°F.
(Critical) Found no paper towels in the paper towel dispenser in the cooking area, prep area, and dishwashing handsink areas. Pic partially corrected by filling the prep area paper towel dispenser with paper towels. Pic has been instructed to monitor and ensure paper towels are available in all paper towel dispensers.
Observed employee working in the cooking and prep area not wearing hat. To correct provide hat and remind employees to wear them.
Found some of the pop nozzles in the self service pop machine soiled with build up. Pic corrected by having employee clean pop nozzles, that is wash, rinse and sanitize pop nozzles.
Found the 3 door prep top cooler not holding tcs food at 41°F. To correct repair cooler to hold tcs food at 41°F or lower. Found the pop carbonator making excessive noise. To correct repair pop carbonator. Found the 2 door worktop cooler not in use. To correct repair cooler if needed for operations.
Found the light in the walk in freezer not working. To correct repair/replace light.
Found the back door propped open. Pic corrected by closing door and was instructed to keep door closed or install a screen door if you wish to prop back door open.
Found the hood filters in the cooking hood soiled with grease and build up. To correct clean hood filters and clean on a more frequent schedule. Found the interior of the microwave soiled. To correct clean microwave and clean at least daily.
Found several enamel coated stockpots holding food in the walk in cooler. To correct replace enamel coated stockpots with commercial grade stockpots.
Observed flies in the back kitchen area. To correct keep door closed, facility clean and dry, in good repair, and continue fly control measures.
Observed the facility has no certificate for employee on staff who is currently certified under a personnel certification program accredited by ansi, utilizing the conference on food protection standards. Correct by providing proof of certification for a member of staff who is regularly engaged in food preparation on a full time basis. Item shall be corrected within 90 days. Pic indicates he will transmit the certificate within 3 business days.
On the main cook line at the doors for the reach in portion of the prep top cooler observed the seals to be open and torn. Correct by replacing the seals to provide a smooth and easily cleanable surface.
Observed two 1/6 hotel pans with standing water used for storing utensils. 1. On the main cook line a pan with tongs, a wooden spoon, and small teaspoons. 2. Next to the rice cooker/warmer a pan with two rice paddles. Item corrected during inspection by properly washing and sanitizing these utensils prior to storing as outlined above
At the kitchen main prep line observed the floor under the fryer and cook top with a heavy accumulation of food debris and grease. Correct by cleaning now and on a more frequent basis. Note: pic had floor cleaned by staff during the inspection. This violation was observed during the last inspection. Please focus on maintaining cleanliness in this area
