The left side of the unit was holding at 41 degrees f or below. Corrected by discarding the potentially hazardous foods and by keeping all other ph foods on the right side of the unit only.

Potentially hazardous foods must cool rapidly from 135 to 70 degrees f in two hours and from 70 degrees f to 41 degrees f in an additional 4 hours. Improper cooling technique used to cool enchilada sauces and salsa after cooking. 8 qt containers used filled halway to store product in, not allowing for rapid cooling of foods from 135 to 70 degrees f in two hours and 70 to 41 degrees f in an additional 4 hours. Corrected by discarding food and discussion to modify cooling method to shallow pans no more than 2" deep or preferably stir sticks using two per product to be cooled.
The drainline for the handsink is leaking. Repair leak to eliminate water leaking onto floor when handsink is used.
Clean utensils found in dirty storage tubs in the dishroom. Clean utensil tubs routinely that house clean utensils. Clean now and place on a more frequent cleaning schedule.
The floors throughout the facility need cleaning, especially under all of the equipment at the floor wall junctures. The walls need cleaning in the cook prep area. Clean now and place on a more frequent cleaning schedule.
The following non food contact surfaces need cleaning: the hood, the hood canopy, the sides of equipment all cooking equipment, fryer cabinets, shelves, non food contact surfaces of slicer and mixer, facility needs a thorough cleaning from top to bottom. Clean now and place on a more frequent cleaning schedule.
The prep unit is not holding ph foods at proper temperature in the center and right side of the unit both top and bottom of unit. Call for repair of unit in order to uniformly hold ph foods at proper temperature. May be an air flow problem. Only store ph foods on the right side of the unit until repaired and use the upright cooler on the line for overflow. Center and right side ordered out of service for the storage of potentially hazardous foods.
The gasket for the drain in the middle compartment of the 3c sink needs to be replaced as it is leaking onto floor when water is run into this compartment. Replace gasket to repair leak.
The microwaves are in need of cleaning. Clean now and place on a more frequent cleaning schedule.
The two door upright freezer in the kitchen was found to be holding potentially hazardous foods partially thawed. Ambient air temperature on the thermometer was 22 degrees f. Adjust unit so that foods are maintained frozen solid. Temperature should be 0 degrees f. If not able to adjust, call for repair.
