Observed multiple open baskets of apples set out on the dining tables in the dining area. Food must be covered to protect from splash, dust and other contaminates. Corrected by rewashing apples and placing a smaller quantity out in a covered lexan container. Corrected

Observed the following non food contact surfaces to be soiled and in need of cleaning: the backside (uppper portion) of the smaller prep table that is perpendicular to the main prep area, the base of the mechanical can opener where it attaches to the table and the exterior of the food processor. To correct, please properly clean these items/locations now and place on a more frequent cleaning schedule.

(Critical) Dining room: the hand washing sink is also being used as a rinse station for dishes prior to placing them in the buss tubs. Either add an additional sink for this purpose or complete this task in the kitchen at the dish washing sink

(Critical) 1) a few kitchen items were observed with food residues on them after washing and placing them in storage for re-use: both immersion blenders, a roast fork, a meat pounder and a ladle. These items were re-cleaned--corrected. 2) some interior surfaces of the ice machine are unclean. It appears the front sliding door and the top cover of the unit need to come off to gain access to the ice production area of the unit to allow for a thorough cleaning. Wash, rinse and sanitize interior surfaces as needed. Some disassembly of the ice making unit will be needed and a variety of cleaning brushes will be helpful to scrub difficult to reach areas. You may consider contracting this work out to a company familiar with cleaning ice machines

The southern front entry door (latch side) has a significant gap present that can allow pest entry. Repair as needed

Wic: the fan guards and the bottom of the evaporator coil drain pan are in need of cleaning

The kitchen floor drains and floor sinks are in need of cleaning now and more frequently in the future (2-3x per week) to remove debris build-up that can allow pests to feed and/or breed

The middle basin of the dish washing sink is leaking water. Repair as needed.

Found water stained ceiling tile above the 2 door reach in cooler. To correct verify source of leak, repair leak if necessary, and replace ceiling tile. Found the coating on the kitchen floor showing wear. To correct consider re-coating floor surface in future.

Found unsealed wood studs secured to shelf to support paneling on the back of shelves. To correct paint/seal wood studs to be smooth, and nonabsorbent.

(Critical) Found various ready to eat, time/temperature control for safety (tcs) food, potato and russian dressing in large storage containers, facility made dressing in plastic squeeze bottles, and various food containers with datemarks exceeding 7 days in the walk in cooler. Pic corrected by discarding some foods, and re-marked remaining items with 7 day datemarks ( day prepared + 6 days). Pic has been instructed to review and retrain employees on proper datemarking.

Found 2 thermometers in the utensil pan not calibrated. To correct follow manufacturers directions and calibrate thermometers.

Found wooden spoons on the dishwashing storage room shelf. Pic corrected by discarding wood spoons, and has been instructed to replace with spoons that are smooth, durable, and easy to clean

Found a slash resistant glove on counter top by the bread cutting board. Pic explained staff use this glove by placing on hand and cut bread, without using single use gloves. To correct review with staff to wear a single use glove, wear slash resistant glove on top of single use glove, and then wear a single use glove on top of slash resistant glove.
