Observed 3 upper section spray nozzles of the dishwashing machine clogged with debris. To correct, please clean out clogged debris from spray nozzles and inspect nozzles more frequently for debris
Observed a box of black single service utensils to be in the lower level storage room in an open box with no protection provided for the utensils. Please properly protect utensils in storage from dust/splash. Corrected by pic removing this box of utensils from use by discarding its contents into the trash/recycling. Corrected
Observed several stacked containers on the clean utensil storage rack to be stored/stacked wet. To correct, please allow the containers to completely air dry prior to storage/stacking

(Critical) 1) an unapproved liquids pump is being used to siphon olive oil from a bulk tank. Provide a pump that has a food grade certification. 2) large five gallon pails from "grainger" are being used for fruit preserves (product made by another vendor). Ensure food containers are made from approved food grade materials

(Critical) Observed several soft, fresh cheeses (cream cheese, farm cheese, etc. ) made at the zingerman's dairy to be marked with dates that exceed a seven day shelf life. Example: bulk cream cheese in a large square plastic tub with the following dates--8/15 to 8/27. Provide seven day shelf life dates
(Critical) 1) observed an employee to have a habit of wiping his food service gloves on his white apron to remove accumulated food debris. Corrected by discussing this issue with the employee and kitchen manager and by the employee providing clean gloves. 2) dish washing employee: food service gloves are being worn under the large gauntlet dish washing gloves. After the employee loads dirty dishes the employee removed the large gauntlet gloves and put away dishes with food service gloves. Corrected by discussing this issue with the kitchen manager. Employees are now instructed to remove both sets of gloves after loading soiled dishes/equipment, wash their hands, put on a new set of single use gloves and then put away the clean dishes
1) multiple sanitizer pails for wiping cloth storage to be located on the floor. Elevate these pails off of the floor by 6". 2) several wiping cloth solutions through out the facility were too weak. Corrected by providing fresh sanitizer
Soda dispensing station: observed stored single use cups/lids in a base cabinet located underneath a wastewater drain line. Relocate these items to an area where they will not become contaminated should the drain pipe leak
Metal kitchen pans are being stacked while still wet after being cleaned in the dish washing machine. Allow time to drain and air dry after washing
In several areas of the facility small flies (fruit/vinegar flies) were observed. No significant breeding areas were observed. Work with your pest control company to target these pests specifically to control them
Soda dispensing station: ensure staff are cleaning the mounting bases (recessed circular channel) on the same frequency as the removable soda spouts and diffusers. Ensure an appropriately sized bottle brush is available for this task
Observed employee clean slicer and found employee not rinsing slicer parts after cleaning and prior to sanitizing. Pic corrected by educating employee to wash slicer parts with soapy water, rinse slicer parts with clean water , and then soak/wipe slicer parts down with sanitizer. Pic has been instructed to monitor and ensure employees are properly cleaning slicer.

Found flies in the basement prep area ceiling along the 3 compartment sink. To correct keep facility clean and dry, in good repair, and continue pest control measures.
Found wood spoons in the clean storage utensil shelf. To correct replace wood spoons with commercial grade spoons that are nonabsorbent, durable, smooth, and cleanable.

Found a cutting board on the cooking/prep line with a crack running completely through the the top and bottom surface. Found several food storage containers with cracks and missing edges. To correct replace damaged-cutting board and food storage containers.
(Critical) Found time/temperature control for safety (tcs) food, pastrami 128 to 130°F in the hot holding unit on the cooking line. Pic corrected by reheating pastrami to 165°F, and has been instructed to monitor and ensure tcs food is held at 135°F or above. Found tcs food, sliced corned beef 110°F in the hot holding unit between coolers. Pic corrected by discarding corned beef, and replaced hot holding unit with another functioning hot holding unit. ,
Found the wall besides the fryer on the cooking line greasy. Found the floor in the roll in cooler in the basement soiled with spills. To correct clean wall and floor, and keep clean.
Found labels on veggie cream cheese containers stating unpasteurized cheese. Pic states label is incorrect and corrected by changing labels for veggie cream cheese. Found labels on cold brew latte without adequate information. To correct provide label with the name of the food source for each major allergen contained in the food.
Found the tiled floor in the basement prep area, in the main level kitchen area, and in the bread front counter worn, cracked and in poor repair. To correct repair/replace tiled floor to be smooth, durable, and easy to clean.
Found the paper towel dispenser mounted on the side of the under the counter just barely above the floor. To correct mount paper towel dispenser to be at least 6 inches off the floor, so paper towels do not touch floor when removing from paper towel dispenser.

Found the walls in the basement storage area of the main building and the side storage building with peeling and blistering paint, and a "salt like" residue on walls. To correct properly repair noted areas to be durable, smooth, and easy to clean.

Observed recently made, time/temperature control for safety (tcs) food, potatoes, tomato soup, and fresh mozzarella cheese cooling covered in the main level walk in cooler. Pic corrected by dividing portions into small portions, placing foods in shallow pans uncovered in the walk in cooler. Observed recently prepared, tcs food, sliced turkey cooling covered in the basement walk in cooler. Pic corrected by loosely covering sliced turkey allowing food to rapidly cool. Pic has been reminded to monitor that tcs food is properly cooled, that is uncovered, from 135°F to 70°F in 2 hours, and then from 70°F to 41 in 4 hours.
Found 2 wooden spoons in a colander on the drain board of the 3 compartment sink. To correct discontinue using wood spoons and replace with utensils that are durable, smooth, and easy to clean. Found food stored in a wicker type basket that was not completely covered with lining in the front counter area. To correct completely cover wicker type basket with liner, if food is to be stored in wicker type basket.
Found the light above the prep sink not working. To correct repair/replace light.
Found a stack of unfolded boxes stored on its edges on the floor of the outside storage pods. To correct store boxes on shelf at least 6 inches off the floor.
Found the basement floor in various areas in poor repair (tile missing, and worn areas). To correct properly repair/replace floor areas. Found the trim between frp boards on the stairway to the basement damaged. To correct repair/replace trim to eliminate gaps.
