A couple of the cutting boards at the bar were excessively grooved and no longer easily cleanable. Boards can be sanded down to remove the grooves. Corrected by replacing the boards with new ones.
I observed a few drain flies around the dishmachine and at the bar by the ice bin. You need to have your pest company treat them.
Please have staff clean better under the dishmachine area and under the ice bin at the bar. Keep the floors dry where the hose is hooked up.
