(Critical) Coffee dairy carafes: observed old stuck on milk/cream on the interior surfaces of the carafes and old milk/cream build-up at the junction of the metal carafe and the plastic handle/spout. Apparently these two pieces are intended to be disassembled for the cleaning process. Staff are now aware of the need to take these carafes apart to be cleaned. Management indicated they will create a s. O. P. To address this issue with staff
(Critical) Six cheese cakes were observed in the display cooler at 47 to 53f. Corrected by discarding these foods.
(Critical) A newer filtration system was installed on the water line to the espresso machine and a back flow preventer was not installed. Install an a. S. S. E. 1012 or 1022 device between the espresso machine and the tee fitting upstream
The cheese cakes are purchased frozen and stored in the basement freezer. Staff pulled the cheese cake and allowed them to thaw too long on a counter. Please revise your sop for the thawing of this food item to ensure it does not raise above 41f
Display cooler: the compressor evaporator coil had a pre-filter on it that was packed with dust. This filter was removed and will be replaced. Ensure this unit filter is maintained frequently enough to allow for adequate air flow.
Chocolate storage room in the basement: observed a couple food storage shelves located underneath two white pvc waste water drain lines. Either relocate the shelving units such that they are not directly under the waste water drain pipes or install a drip collection trough to route any waste water away from the food storage areas
(Critical) Found time/temperature control for safety (tcs) food, potato salad 44°F, rice pudding 45°F, and sandwiches 51°F in the top shelf of the display cooler. Pic corrected by discarding sandwiches and placed other items in a properly working cooler. Pic has been instructed not to use the top shelf of the cooler to hold tcs food, as tcs food in lower parts of cooler were at 41°F. To correct repair cooler to hold tcs food at 41°F in all parts of cooler.
Found the exterior areas of coffee spouts on the coffee urn in the back prep area soiled. To correct clean spouts and clean as needed.
Found the top shelf of the front counter display cooler not holding tcs food at 41°F. To correct repair cooler to hold all tcs food at 41°F. Found the sliding door of the gelato cooler/freezer cracked and taped. To correct repair/replace sliding door.
(Critical) Found the interior front shield and the front cover and surrounding areas of the ice forming cabinet of the ice machine soiled with moldy build up. Pic corrected by emptying ice bin and washed, rinsed and sanitized ice machine.
Found mop left in the bottom of mop bucket in the mop closet. To correct hang mop allowing it to air dry after cleaning task has been completed.

Pic corrected by discarding bottles of cold brew latte, and has been reminded to surround bottles completely with ice, add ice as needed, or to store in cooler, and to ensure tcs food is held at 41°F or lower. Found tcs food, baked goods, cabbage strudel, vegetable strudel, and potatoe and bacon strudel 73°F on top of the display cooler. Pic corrected by discarding products, and has been instructed to either store tcs in cooler at 41°F or lower or provide information from an approved food safety lab that food is not a tcs food and can be left out at room temperature. ,
Found containers of white chocolate chips packaged at this facility without appropriate label on the chocolate shelf. Found bottles of cold brew latte without appropriate label in the ice filled beverage cooler by the front counter. To correct provide a label with the name of the food source for each major food allergen.
Observed flies in the prep area of the front counter. Pic corrected by hanging fly tape in areas away from food areas. Pic has been instructed to continue fly control measures and to contact pest control company for additional measures if needed.
Found the cane sugar container for self service without cover/protection. To correct provide means to cover/protect sugar.
Found the duct area and sides and edges of the dishwashing maching hood soiled with dusty build up. To correct clean duct and hood and clean on a more frequent schedule.
Found the side glass door in the dining area cracked and covered with tape. To correct repair/replace door.
Found a re-used gallon container which previously held apple cider being re-used to hold chai mix. To correct discontinue re-using single use containers to hold food.
(Critical) Observed employee wet paper towel in handsink and wipe probe thermometer and then place in storage bin. Pic corrected by having employee use the wiping cloth in the sanitizing bucket to wipe down thermometer, and has been instructed to monitor that employees are properly sanitizing thermometers between uses, and to wash, rinse, and sanitize in use utensils (thermometer) at least every 4 hours.
Found wood shelves in the basement storage area. To correct seal wood shelves to be nonabsorbent.
Found the door gaskets of coolers soiled with accumulation of debris. To correct clean as soon as possible, and clean on a more frequent schedule to preclude accumulation.
Found the floor surrounding the display cooler uneven. To correct repair/finish floor to be smooth, and easy to clean.
Found no handwashing sign in the mens public restroom. To correct provide sign reminding employees to wash hands.
Found the door tracks of the self service storage shelves soiled with accumulation. To correct clean as soon as possible, and clean on a more frequent schedule.
Found numerous spreaders stored in the ice cream dipper well which blocks adequate flow of particulates to the drain. To correct store only necessary utensils in dipper well to allow adequate flow of particulates to the drain.
