(Critical) I found cooked sausage, hot dogs, chicken breasts and hash browns at unsafe temperatures of 94* to 122*f. These items must be hot held at 135*f or greater at all times. Be sure to have appropriate hot baths set up to achieve this and use your thermometers to verify hot holding temps are above 135*f. Product was discarded. I will be back in 2 weeks to verify you have these items holding at safe temps.
You need to have 2 sanitizer buckets made up with appropriate amounts of sanitizer in them. Using quat tablets, so keep at 200 ppm. Use test papers to verify strength.
The interior of the microwave was dirty. Clean often with sanitized wiping cloth.

Mop bucket was not emptied and mop left in water. Empty after uses and hang up mop to dry between uses. Need a mop holder.
