Note: the right bottom door of the 3 door prep top cooler was popping open when closed. Please verify if this is causing cooler not to hold tcs food at 41°F.

Found the cap of the atmopspheric vacuum breaker on the utility faucet missing. To correct repair/replace missing cap of the atmospheric vacuum breaker on utility faucet.

Found the bottom portion of the 3 door prep top cooler not holding tcs food at 41°F. Please verify if the door popping open when closed is the cause of cooler not holding tcs food at 41°F. To correct repair/replace cooler to hold tcs food at 41°F or lower.

Pic has been reminded to cool foods rapidly from 135°F to 70°F in 2 hours and then from 70°F to 41°F in 4 hours. Pic has been instructed to monitor that employees are cooling food properly.

Found hot tcs food, pastrami 126°F in the hot holding drawer unit below the slicer, and corned beef 113°F on the slicer ready to be sliced. Found employees shoes stored on top of wrapped toilet tissue and booster chairs. To correct designate where employees may store their personal items and protect utensils from contamination.

Found the walk in cooler holding tcs food at 44°F to 45°F. To correct repair/replace walk in cooler to hold tcs food at 41°F or lower. Found the front counter display cooler not in use and not working. To correct repair/replace cooler to hold tcs food at 41°F or lower.

Found no paper towels in one of the unisex restrooms. To correct provide paper towels and keep restrooms well stocked.

Found facility made coleslaw cooling covered in walk in cooler. To correct cool uncovered or covered loosely to rapidly cooled time/temperature control for safety (tcs) food. Found facility cooling corned beef in ice water but not turning/rotating large pieces to facilitate heat transfer. To correct monitor cooling corned beef times and turn corned beef for rapid cooling and to facilitate heat transfer from the surface of food.

Found slight accumulation in the diffuser of one pop nozzle of the pop machine in the self service area. Pic corrected by washing, rinsing, and sanitizing diffuser, and has been instructed to monitor that employees are thoroughly cleaning pop nozzles and diffusers.
