In the brewing room observed a hole in the roof exists where the exhaust for the hot water heater (removed) was located. Bags of beer grain are being stored under this opening. Correct by capping off this pvc vent asap. This violation was observed during the last inspection.
Brew house observed the avb removed from the utility sink. Corrected during the inspection by replacing the avb
(Critical) Observed a pail of carrots being pickled in the walk in cooler. Corrected by discarding these carrots.
(Critical) Observed six, deep hotel pans with four pork butts per pan still in their cooking juices that were pulled from the smoker to be cooling in the walk-in coolers. This meat will never cool quickly enough to in this manner. After smoking/cooking these pork buts must be removed from the liquid and broken down to expedite the cooling process. Corrected by doing the above process and placing the meat on sheet trays on a speed rack for cooling. The cooking liquid was placed in freezer bags and frozen for later use

1) two pans of smoked pork butts were stored on a push cart in the bottled beer walk-in cooler under the evaporator coil that had condensation droplets on it. Corrected by moving this cart to the other walk in cooler. 2) large walk in cooler: foods (cases of pork butts, pails of bbq sauce and a pail of marinating chicken) were stored on the floor. Elevate off of the floor by at least 6 ". 3) the brewing room: a hole in the roof still exists where the exhaust for the hot water heater (removed) was located. Bags of beer grain are being stored under this opening. Cap off this pvc vent asap
Two shelving units are located in a back hallway for food items. The lighting in this area consists of bare bulbs in string lighting. Either provide protective bulb guards or shatter-proof coated bulbs for this area.
Observed cardboard being used as a divider in a small container to keep single use forks and knives separated in the kitchen. Either provide two separate containers or utilize a multi-use material that is smooth and easily cleanable
1) the floor drain in the center of the kitchen is in need of cleaning. Remove the grate and clean the piping below to remove the debris build-up. 2) the insulated coolant pipes located outside the large walk in cooler have mold growth on them. Thoroughly clean these surfaces
(Critical) Observed multiple chemical spray bottles throughout the facility with no labels indicating the chemicals contained inside
(Critical) Observed the interior of the tubing used to fill growlers to be unclean. Purchase and use an appropriately sized bottle brush or equivalent to maintain the interiors of this tubing clean
(Critical) The new kitchen facility only has a metal stem food thermometer that reads temperatures from 5of to 500f. Provide a 0f to 220f metal stem thermometer or a digital unit
(Critical) The bar area glass washer was not sanitizing with chlorine. It was determined the bulk chlorine supply (5 gallon container) had gone weak over time. Corrected by providing a new supply of this chlorine sanitizer. In the future, purchase and use chlorine in 1 or 2. 5 gallon containers that you will use up more quickly before the chlorine dissipates
(Critical) Several employees were questioned as to the location of their sanitizer test papers. This facility uses iodine, quat, and chlorine sanitizers which require separate test kits. Provide these required test kits and ensure staff are knowledgeable on how to use them for sanitizer verification
The floor under the bar glass washer is in need of cleaning
Observed some mold growth on the bar matting and the back bar counter. Remove the beer glasses so the matting and the counter can be cleaned. Place this task on a more frequent cleaning schedule to preclude the mold growth.
Observed the floor sink serving the brewing room three compartment sink to be gurgling and draining slowly when it was in use. Unclog this drain as needed
(Critical) Observed multiple locations (at least four) in the brewery operation where water hose connections are not provided with proper back flow preventers (pressure vacuum breakers or rpz units). Each point of use hose connection requires it's own back flow preventer. Lets schedule a site visit asap with your plumber to identify all the locations where back-flow preventers are required
(Critical) No hand washing soap was available at the gulo room hand washing sink. Corrected by purchasing pump soap
(Critical) Observed a white container of shredded chicken that was moldy in the gulo room refrigerator. Corrected by discarding. Ensure staff are regularly checking your refrigerators for foods that need discarding
(Critical) The flexible spray hose was re-installed at the brewery three compartment sink. Provide a pressure vacuum breaker (at the required elevation) or a mini rpz for the water supply serving this spray hose
(Critical) New mop closet: the mop sink faucet with an atmospheric vacuum breaker has a "y" splitter installed down stream. Correct by installing a bleed-off tee between the faucet spout and the "y" splitter (contact your chemical dispensing company). Brewery utility tub: has a "y" splitter with shut-off valves is installed on the thread-on atmospheric vacuum breaker. The atmospheric vacuum breakers cannot have any shut-off valves installed down-stream. Corrected by removing the "y" splitter.
(Critical) Observed empty paper towel dispensers at the following locations: employee restroom, brewery hand washing sink, and the main bar hand washing sink. Corrected by providing replacement paper towel rolls
Mop closet: the wet mop head was left in the mop wringer. Brewery: the wet mop head is resting in the mop bucket. Provide mop hangers to hang up these wet mop heads (with head downward above a mop sink/utility tub) to facilitate faster drying
The following item is still uncorrected from several inspections prior: observed an open topped reservoir that is used to transfer wort from the mash tun to the boiling kettle. Provide a protective cover for this vessel (consider clear plastic so the liquid level can be observed as needed)
The fan guards in the gulo room two door cooler are in need of cleaning to remove dust/mold build-up
The new service door located in the sw corner of the brewery operation (near the new, small garage door) has gaps large enough at each end of the door for mice to gain entry. Adjust/repair the door sweep as needed to eliminate these gaps
Observed multiple ceiling tile sections in the walk main walk in cooler to be sagging and moldy. Replace these ceiling tiles with a cleanable, moisture-proof material such as frp
The gulo room microwave oven has splattered food debris on the interior surfaces. Maintain this equipment clean

(Critical) Observed a red flex drain hose from fermentation tank #4 to be inserted into the trough drain. Always maintain an air gap on the discharge end of your hoses
(Critical) Observed an overhead spray nozzle installed on one of the faucets of the brewing house three compartment sink with a really long hose and no spring or other retaining system to maintain the required air gap above the flood rim of the sink. Provide a means to support the entire hose and spray nozzle
Observed just a few small flies at the mop sink and adjacent floor sink area of the brew house. Please maintain the pipes and drains in this area free of debris/slime build-up. Cleaning of these items will be needed multiple times per week to eliminate fly breeding areas
Provide additional paper towel at the brew house hand washing sink
1) observed a significant amount of spilled grain on the floor in the grain storage area. Maintain the floor in this area to eliminate a food source for pests. 2) observed water and slime build-up on the floor under the co2 tank in the sw corner of the brew house. Clean regularly as needed
Observed some paper plates, plastic cups and bowls stored upright at the back bar counter. To protect the food contact surfaces of these items either store these items inverted or in a bag or covered container

Provide quat test papers for your quat sanitizer
The following two items are still uncorrected from last inspection: observed a piece of equipment located near the mash tun to be elevated with wood (the lower section is made of treated lumber the upper portion of untreated wood). This wood was not sealed to prevent the absorption of moisture. Some mold was observed to be growing on this wood. Either replace this wood with a material that won't absorb moisture or after cleaning and drying this wood seal it with a water proof material such as varnish or polyurethane. Bare wood was also observed to construct a riser for a small chest freezer that is located in the brewing room. Seal this wood to provide a smooth, easily cleanable surface that doesn't absorb moisture

Observed only an atmospheric vacuum breaker (asse 1011 device) installed on the mop sink faucet prior to a black rubber hose (not approved for installation on the drinking water system) leading to the new chemical dispenser. This atm. Vacuum breaker is not rated for installations where there is a down stream shut-off. Correct by one of the following: 1) replace the black rubber hose with one that is nsf or equivalent approved for installation on a drinking water supply line (easy correction), 2) provide a bleed-off tee installed between the faucet and the existing black rubber hose (easy correction) or 3) eliminate the current water supply hose to this dispenser and provide water to this chemical dispenser via the closely located rpz back flow preventer
(Critical) Observed two unapproved insecticides (for household use only) on a shelf near the boiler. Ant killer granules and an "enforcer bug max" spray bottle. Eliminate these unapproved insecticides from the facility. In the future, keeping your facility clean and dry will minimize the attraction of and/or the ability for pests to reproduce in your facility. If needed, utilize a licensed pest control company if you have pest issues

Observed the brewing room hand washing sink to be blocked by several small beer kegs. Please keep proper access to your hand sinks by keeping the area clear in front of them
Observed a few small flies by the nw corner of the brewing room (at the mop sink and floor sink area), and some sunflower seeds/bird seed along the east wall by the grain storage tubs. Ensure staff are monitoring frequently for the presence of pests.
1) observed evidence of the watts 009 rpz along the east wall of the brewing room to be leaking periodically. Contact a plumber certified for testing back flow preventers to evaluate this unit nd repair as needed. 2) provide a drain line for your boiling kettle drain port on the exhaust duct. Currently the condensate is dripping from this drain port into a bucket propped up on some pipes below the exhaust duct.
1) brown and black slime growth that has accumulated in the two brewing room floor sinks (in the nw corner by the mop sink and under the three compartment sink). Thoroughly clean these areas now and at least 2 to 3 times per week. 2) some mold growth was observed on the wood used to elevate a stand alone piece of equipment near the mash tun. Clean as needed. 3) spilled grain was noted under several pallets in the grain storage area. To prevent the attraction of pests, ensure your pallets are moved regularly so the floor can be cleaned
Observed plastic eating utensils stored in plastic cups on the back counter of the bar with the food contact end sticking up. These utensils need to be inverted so staff only contact the handles when dispensing the utensils

Provide a screen door for the brewery area service doorway to prevent the entry of pests when the door is propped open for ventilation
Observed two pallets of previously opened bags of brewing grains in the warehouse with evidence of spilled grain. Provide a metal/plastic storage container with a tightly covered lid to store these bags in, or provide a food grade container w/lid to directly pour these grains in for storage to prevent pest access to these foods
Observed the refrigerator/freezer unit to be damaged (broken interior plastic panel with insulation exposed). Provide a replacement unit with smooth, easily cleanable surfaces
Observed evidence of ant activity (small piles of sand along the eastern wall of the brewing room). Monitor the facility and take appropriate action to prevent/eliminate pest from the facility, while ensuring the protection of food and clean equipment
(Critical) Observed 1) the drain line from the charcoal filter to not terminate with an air gap above the receiving drain. Provide a vertical air gap that is at least 2 x the discharge pipe diameter. 2) the two drain lines from the brewing equipment do not terminate with an air gap above the trough drain in the floor. Provide a device to hold the end of the hoses in place that also maintain the required air gap (vertical height that is at least 2x the discharge pipe diameter)
Observed three bags of single service drinking cups stored on the floor in the back of the brewery. Corrected by elevating these cups off of the floor
Observed a wet wiping towel stored on the top cover of the bar area ice holding bin. Please only store wet wiping cloths in a container of sanitizer
Observed only hose bib atmospheric back-flow preventers installed on the hose connections at the mop sink and the hot water line located behind the fermentation tanks. These water lines have non-food grade hoses with terminal end shut-off valves. These back-flow preventers are not compatible with down-stream shut-offs. To correct this issue provide either a spill proof pressure vacuum breaker (a. S. S. E. 1056 device installed at the required height) or an rpz back-flow preventer (a. S. S. E. 1013 device--no elevation requirement) upstream from the hose connections. The brewer indicated a desire to add a new hot water connection for the cold room. You could install one back-flow preventer to serve both connections if the back-flow preventer is installed upstream from the point where the water line will split to serve both hot water connections. Additionally, the brewer indicated only needing cold water to serve the hose at the mop sink. Install a back flow preventer and a separate hose connection at this mop sink location
