(Critical) Observed the chlorine sanitizer level in the dishwashing machine rinse cycle to be too weak. Corrected by providing fresh chlorine sanitizer and priming the system. Chlorine is now provided at +/- 75-100 ppm

The cooling method for cooling taco meat is not approved as evidenced by moisture on lid underneath. When cooling do not cover to expedite the cooling process. Product was at 39 degrees f when temped and 2" deep. Corrected by discussion and changing procedure.
The thermometer for the nacho cheese dispenser is inaccurate. Product dispensed at 160 degrees f. Thermometer indicates 115 degrees f. Correct by replacing thermometer if possible. If not continue to monitor product temperature daily
