Found metal stem thermometers to be out of calibration. Corrected - thermometer was calibrated at the time of this inspection. Also, the thermometer was the only thermo that could be calibrated. Provide one for cooking @ grill and at least one more for inside at hot holding units
Found most food staff without required hair restraints. To correct - provide required hair restraints
(Critical) The nacho cheese was found to be at 116 degrees f due to being too hot and then turned off to cool. This is nto an aprpvoed practice. Must maintain 135 degrees f or above. The facility uses a domestic west bend crck punit. For next seapson replace with a commercial approved cheese warmer or equivalent so tht h proper temperatrue can be maintained. Corrected by discarding chees and reheating new chees on burner at time of inspection
Cloth draping under the counter is not approved as it is absorbent and not cleanable. Replace with approved material prioer to the 2011 season.
Hamburger was found n the sink in standing water and in the compartment of the sink without water. Thaw under cold running water or enough in advacne in the cooler to properly thaw. Corrected by putting burger udner cold running water.
Domestic crockpot used for holding nacho cheese is nt approved. Replace with a commercial unit prior to the next season.
The cheese warmer (ie crockpot was not holding cheese at proper temperature. ) either not adjusted properly as it was too hot and then shut off to cool down. Adjust or replace with commercial unit prior to next season in order to maintain food at proper temeprature.
(Critical) Hot water is not supplied to facility. Resupply hot water to sinks asap. Provide written documentation and fax that this has been corrected. Include when faxing sop s for manual dishwash.
