(Critical) Found no thin tip thermometer available as required. To correct - obtain the required thin tip thermometer within 10 days ( feb. 28, 2014). Send a digital picture of new thermometer in concession stand to: bernbeckd@ewashtenaw. Org to verify correction. This thermometer is available at gfs. (Critical) The stainless steel cleaner and was found on top of the ice machine. Quat sanitizer was found in the cabinet on top shelf above the foil sheets. Store cleaners and sanitizers so that they are not above food or food contact surfaces. Corrected by relocating these items to approved locations away from foods and food contact surfaces.

(Critical) Hot dogs were at 122 - 127 degrees f at the time of inspection. Hot dogs must be held at 135 degrees f or above. Pic indicated that they temped the hot dogs and were at 140 degrees f. Corrected by discussion and reheating to 165 and holding at 135 degrees f. Will be consumed well within 4 hours of removal from temperature control.

The metal stem product thermometer was not properly calibrated and was 10 degrees f. Calibrate your product thermometer or replace with an accurate thermometer in order to be able to properly monitor food temperatures.
