(Critical) Found a spray bottle in the mop closet that was not labeled as to its contents. Corrected - spray bottle was discarded. It is also noted that kitchen staff do not use this closet for chemical storage; it is used by the custodial staff. As such, custodial staff must be reminded of the importance of labeling all spray bottles with its contents

(Critical) Found one can of mandarin oranges to be severely dented in general storage with other cans. Corrected - dented can was placed in segregation to return for credit

Found one of the two probe thermometers to be in need of calibration. Corrected - thermometers were calibrated during this inspection. Did note that the nuts on the probes were loose and the needle moved too easily while calibrating. Suggest replacing old probe thermometers with new ones

Found both dumpsters uncovered and open. One dumpster is also missing a lid. To correct - please keep the lids closed on the dumpsters to prevent pests/rodents from gaining access to the garbage. Also, missing lid on small dumpster must be replaced. Again, it is understood that kitchen staff does not directly use the dumpster, that the custodial staff is responsible for disposing of garbage from the building. As such, custodial staff should be informed that the dumpster lids are required to be closed when not accessing the dumpsters

(Critical) Found mop sink to have a "y" connector on the faucet without the required hose bib vacuum breaker installed on both ends of the "y". Only one vacuum braker present. To correct - install an additional hose bib vacuum braker on the side of the "y" that is missing. Please have facilites correct this violation within 10 days. Found overturned milk crates being used to store pickle buckets off the floor. To correct - store pickle buckets on existing shelving or provide wheeled dolly for bucket storage. Overturned crates are hard to clean with the numerous weave openings

Observed the two back-up dial type thermometers to be reading +/- 10f too low. Corrected by adjusting these units

Observed both covers open on the garbage dumpster. Maintain these covers closed to keep pest out of the garbage

Staff did not use the provided chlorine test papers to verify the sanitizer concentration of the wiping towel sanitizer. Ensure your solutions are tested daily to verify 50 to 200 ppm chlorine

(Critical) Provide air gaps for the following drain lines: 1) the 3/4" ice machine drain line (provide a minimum of a 1. 5" air gap between the discharge pipe and the flood level of the receiving basin). Consider installing a cable tie or similar to support the pvc drain pipe. Cutting off some of the end of the pipe may be required. 2) the 2" copper drain line from the food prep sink (provide a 4" air gap above the flood level of the receiving basin)

Ensure the two lids on the outside garbage dumpster are closed after trash is loaded into the dumpster

Observed a plastic pump insert for dispensing bulk mustard to not be cleaned prior to storage. Staff will discard this pump after showing staff. Ensure these dispensers are thoroughly cleaned after the bulk container is emptied
