(Critical) Corrected at time of follow-up inspection: hot water found at proper temperature at handwash sinks in men's and women's restrooms off dining hall. The hot water temperature does fluctuate; please assure hot water maintains >100°F at all times. Adjusted setting on point of use hot water heater under handwash sink in men's restroom at time of inspection. Hot water at all other handwash sinks in kitchen and the other set of restrooms in hallway adjacent to kitchen maintaning >100°F

(Critical) Corrected at time of follow-up inspection: chlorine test kit has been provided in dishwash area to use for monitoring chlorine sanitizer concentration in sanitizer compartment for manual warewashing. Facility will be using chlorine (observed bleach in facility) instead of quaternary ammonium. In the future if you choose to use quat (sani-tabs) you will need to purchase the proper quat test kit to assure proper quat sanitizer concentration
