(Critical) I observed boxes of foodservice gloves stored with the chemicals by the mop sink. Store foodservice glove in an area away from chemicals. Corrected by doing such.

(Critical) Appetizers for an event were found not protected by a sneeze gaurd. After i arrived, one was brought out. You need to be using your sneeze gaurds at all public events. Corrected. Make sure you set out enough sneeze gaurds to protect all foods.

Frozen food product observed stored on the floor in the walk in freezer. You need to keep product on racks at least 6" off the floors.

(Critical) The high temp dish tank was found to be not hot enough. Kyle adjusted temps within the booster heater and unit was found to hit the correct temp via a heat tape. Corrected as such. Be sure to use your heat tapes more often than once a week.

One of the utensil storage drawers across from the cooking equipment was observed dirty. Clean the drawers more often. Corrected by cleaning drawer and utensils in drawer.

I observed several trays of cooked off vegetables sitting out on tables in the kitchen and at ~ 105*f. Staff need to cool rapidly by placing these items in the walk in cooler to expedite the process. Corrected by doing so.

(Critical) Found time/temperature control for safety (tcs) food, an opened case of raw bacon 45°F on the end of the cooking line, moving rack. Pic corrected by placing bacon in to walk in cooler, and has been reminded to monitor that staff are placing tcs food back into cooler after use. Found tcs food, a baking sheet tray of cooked sausage 60°F on the top of the cooking line, moving rack. Pic corrected by discarding sausage, and has been instructed to monitor that food not used/consumed must be either cooled or thrown out.

Found the floor (under equipment, edges and corners) on the cooking line and prep area soiled with accumulation of debris. To correct throughly clean floor and clean on a more frequent schedule.
