To correct repair/replace steam table to hold tcs food at 135°F and keep hot food in other hot holding units as much as possible until steam table is repaired. ,
(Critical) Found the water supply line on the steamer under the cooking hood without backflow preventer. To correct provide a backflow preventer with intermediate vent, meeting asse 1012 or 1022 on steamer water supply line. ,
(Critical) Used a quat test kit and found the quat sanitizing solution in the sanitizing compartment of the 3 compartment sink below manufacturer specification of 150 to 400 ppm. Pic corrected by adding quat sanitizer to about 300 ppm in the sanitizing compartment of the 3 compartment sink, and was reminded to use test kit to verify sanitizing solution. ,
(Critical) Found time/temperature control for safety (tcs) food, packages of salad such as turkey and cheese salads 45°F in the cold hold well. Found tcs food packaged ham sandwich lunch boxes 50°F in a pan on top of frozen ice packets on the service line. Found wrapped cups of yogurt parfait 59 in a double pan in the steam table. Pic temporarily corrected by discarding tcs foods and has been instructed to either provide equipment that can cold hold tcs food at 41°F, or place tcs foods on a time control policy. ,
Found case of single use lunch tray stored on the floor of the storage room. To correct store on shelf at least 6 inches off the floor.

Found 2 mouse traps with dead mice, one under the 3 compartment sink and one by the milk cooler in the kitchen. To correct properly dispose of mice and traps, and remove at a frequency to prevent accumulation.
(Critical) Found opened packages of lunchmeat (ham and turkey) passed it's 7 day datemark. Pic corrected by discarding lunchmeat and has been reminded to check dates and discard items passed it's 7 day datemark.
Found the door gaskets of the 3 door reach in freezer loose. To correct properly repair door gaskets to seal properly.
Found the hood filters of the hood soiled with dusty build up. To correct clean hood filters and clean on a more frequent schedule.
