(Critical) Food-contact surfaces of slicer in need of cleaning. Food-contact surfaces shall be clean to sight and touch. Critical corrected: at time of inspection slicer set aside for proper cleaning and sanitizing. Owner will discuss with staff proper slicer cleaning method. Brush is available to clean hard to reach areas

(Critical) Soup cooled from previous day found at improper temperature in upright reach--in-cooler rear kitchen. Cooked potentially hazardous food shall be cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F. Critical corrected: at time of inspection discarded cheddar cheese soup found at 45°F in upright reach-in-cooler. Other food items in same cooler found at 37°F. Owner will discuss with closing staff proper cooling procedure. Per owner cooling method should be as follows: place soup into metal pan into ice bath uncovered in 3-comp sink until food item reaches 50°F, then placed in upright reach-in-cooler uncovered to finish cooling. Please monitor to assure soup cools within time/temperature criteria stated above.

These areas in need of cleaning: interior red recycling bin front counter, floor/wall juncture front counter area, end of drain line under sink front counter, interior drain under sink front counter, ceiling fan covers in restrooms, wastebasket lid rear kitchen, interior bottom section of upright freezer rear kitchen and rear section grill express unit front counter. Please clean now and place on routine cleaning schedule

Improper cooling method used for cooling soup from previous day. Observed soup in upright reach-in-cooler with tight-fitting lid with condensation on inside of lid. Please discuss with staff and use one or more of the following methods to assure proper cooling. (see 3-501. 14)

Floors front counter in poor repair. Please repair to provide a smooth, easily cleanable surface. Raw wood exposed in some areas. Owner discussing with contractors different ideas for repairs

Some clutter and unnecessary items stored in rear storage/office area. Please sort through and get rid of any items not used in the operation and maintenance of facility

(Critical) Some refrigerated, ready-to-eat, potentially hazardous food items found with expired discard dates. These food items shall be discarded if not consumed within 6 days from preparation or open date. Critical corrected: at time of inspection discarded some cream cheese containers with a preparation date of 8/6/09 and a quiche with a discard date of 8/20/09. All food items properly date marked, please remember to monitor daily and discard those food items that have expired discard dates. Facility is adding 6 days to date prepared, date opened or date removed from freezer

(Critical) Some worn spatulas in rear kitchen storage. Food-contact surfaces shall be smooth and easily cleanable. Critical corrected: at time of inspection discarded worn spatulas. Please monitor spatulas closely and discard as needed. Please consider more durable spatula for use near blades in food processor

(Critical) Some refrigerated, ready-to-eat, potentially hazardous food items found without proper datemarking. These food items once opened, prepared or removed from the freezer shall be clearly marked with the discard date. Critical corrected: at time of inspection correctly labeled quiche, cheesecakes, cheesecake brownies and all cream cheese containers. All deli sandwiches properly marked. Please remind all staff when cream cheese is prepared all containers shall be clearly marked, when cheesecake and quiche are delivered or removed from freezer please clearly mark. Add 6 days
