(Critical) Your metal stemmed digital thermometer was not reading temps due to a dead battery. Staff need to keep this thermometer accurate and in use at all times. Corrected by providing new battery.

(Critical) 2 opened containers of whipped cream were not date marked with 7 day use by dates. Staff need to be held accountable to comply with this code. Corrected by discarding.

(Critical) A container of cottage cheese had a sell by date of october 14 and opened diced ham was opened 11/19 and not discarded after 7 days. Staff need to be auditing dates and marking the correct dates on foods. Corrected by discarding. Person in charge needs to be assuring compliance with food code by more active self inspections.

(Critical) I observed cooked of hot dogs in the hot hold unit at 118*f. Must be holding hot foods at 135*f or greater to control the growth of harmful pathogens. Staff need to be using metal stem thermometers to verify holding temps of foods. Corrected by discarding foods and turning up thermostat. Put an accurate oven thermometer in your hot box to assure proper temp is acheived.

(Critical) 2 raw shell eggs were found stored on a sheet tray with bagels and cheese and above other ready to eat foods in the upright cooler next to the hot hold box. Raw animal product needs to always be stored below and not next to any ready to eat foods to control the risk of cross contamination. Corrected by discarding eggs.

Be sure staff are cleaning the debris off the top of the dishmachine more frequently.

(Critical) I found 6 containers of cold salas (slaw, chicken and pasta) past their use by dates. Staff must be auditing dates on a daily basis and discarding any expired foods. Corrected by discarding these foods.

I observed the following areas dirty: drawer handles across from the grill, the stove drip tray and the fryer sides and area under and behind the fryer. Please be sure to clean these areas on a daily basis.

(Critical) The sanitizer in a spray bottle was found to be excessively strong (>500ppm). When filling bottles with sanitizer, draw directly from the pre-mix hose. Keep at 150-400ppm. Corrected by doing such.

Repeat violation 2 times in a row. Staff need to be cleaning the top of the dishmachine at least once a week.

The exhaust hood is not working properly. Have it serviced and fax over copy of work order to me by next friday, jan. 13, 2012.

Staff need to use the sanitizer test papers to verify proper sanitizer strength, which is 150-400ppm.

I observed condensation leaks coming out of the compressor in the walk in cooler. Have serviced. Do not store food under these leaks until repaired.

Post a small waste basket at each handsink.

Please clean the top of the dishmachine more often.

(Critical) Observed ready-to-eat pre-sliced deli meat in an opened package without proper date marking after opening, located on shelf inside the walk-in refrigerator. To correct should instruct food employees to date mark potentially hazardous ready-to-eat foods that are held for more than 24 hours. Should add six days to the day the food item is opened or prepared. Example opened on 1/06/2011 add six days discard date of 1/12/2011. This item was corrected by pic discarding food item during this inspection.
